Claims (3)
- 대등한 WF 유동성 옥수수 전분의 젤라틴화 온도보다 5 내지 7℃ 높은 젤라틴화 온도, 대등한 WF 유동성 옥수수 전분의 겔 강도보다 100% 큰 겔 강도, 또는 이들 모두를 가지는 것을 특징으로 하는, 40 내지 80의 수 유동도(water fluidity)를 가지는 사고전분.
- 제1항의 사고전분 및 물을 포함하는 조성물.
- 제1항의 사고전분을 사용하여 겔을 제조하는 방법으로,a) 물 및 유효량의 전분을 포함하는 슬러리를 제조하는 단계;b) 슬러리를 증자하여 졸(sol)을 제조하는 단계; 및c) 졸을 냉각하여 겔을 제조하는 단계를 포함하는 겔 제조방법.
