Claims (2)
- 취반미 및 가열처리 공정을 포함한 쌀 가공품의 살균 방법에 있어서,취반 및 가열처리에 앞서 원료미에 대해 pH 11~12의 강알칼리성 수용액으로 5분~30분간 접촉 처리한 후 pH 2.2~2.7의 강산성수에 30분~1시간 동안 침지 처리하고 뒤이어 증류수로 5분~30분간 접촉 처리하는 것을 특징으로 하는 취반미 또는 쌀 가공품의 살균 방법.
- 제1항에 있어서, 강알칼리성 수용액은 식염 첨가의 전해수 생성 장치에서 얻어진 강알칼리성수인 것을 특징으로 하는 취반미 또는 쌀 가공품의 살균방법.
