Claims (4)
- 소정의 초콜릿 혼합물로 초콜릿 시트를 만드는 과정과, 측면커터로 초콜릿 시트를 가로 및 세로로 절단하여 일정한 크기의 초콜릿 절편으로 만드는 과정과, 표면커터를 사용하여 초콜릿 시트의 윗부분 표면을 균일하게 깍아내는 과정을 포함하여 구성되는 절편 초콜릿의 제조방법에 있어서,상기 초콜릿 시트의 표면을 깍아내는 과정은 초콜릿 시트를 10∼16℃의 온도에서 8∼12분 동안 냉각시킨 후 길이방향으로 진행시키면서 10∼20°의 각도로 설정한 표면커터를 사용하여 깍아내는 과정으로 이루어진 것을 특징으로 한다.
