Claims (4)
- 게 살에 함유되어 있는 영양소와 고유한 맛을 유지하면서 장기간 보관이 가능하도록 하는 게 통조림 및 게 레토르트식품의 제조방법에 있어서, 게의 갑을 벗기고 불 가식부위를 제거하는 탈갑공정과, 열탕에서 5-7분간 자숙하는 것과(원료1) 섭씨 50-55도에서 5-7분간 가열하는(원료2)것의 1차 자숙공정, 껍질로부터 육을 분리시키는 채육공정, 1차 자숙에서 섭씨 50-55도에서 5-7분간 가열한 것(원료2)을 열탕에서 2-3분간 자숙하는 2차 자숙공정, 게살에 함유한 유황 및 철분 등의 변색원인 물질을 제거 억제하기 위하여 상기 혼합첨가물 1.5% 용액에 PH 6.2- 6.6으로 조정하여 4시간 이상 침지하는 침지1 과, 침지1 과정을 거친 것(원료1)과 1, 2차 자숙을 거친(원료2) 것의 잔존하는 변색 원인 물질을 제거하고 게 고유의 색택을 선명하게 유지하며 차후 제조 과정에서 발생 할 수 있는 변색 변패를 방지하기 위하여 상기 혼합첨가물 1.2% 용액에 5분간 침지하는 침지공정, 상기 게살을 레트르트용 합성수지제나 비철금속제의 용기에 수납하고 소정의 맛을 첨가시키는 충진공정, 여기에 밀봉하고 섭씨98-100도 에서 100-120분간 살균하는 것과 섭씨 110도에서 60분간 살균하는 것을 특징으로 하는 게 통조림 및 게 레토르트식품의 제조방법.
- 제1항에 있어서 1 . 2차 자숙을 행하고(원료2) 침지1 . 2과정을 거치며 유산지를 사용하지 않는 것을 특징으로 하는 게 통조림 및 레토르트식품 제조방법.
