Abstract
Description
また本発明は、振出し孔を有する振出し容器に充填された10%粒径D10が18μm以上かつ90%粒径D90が400μm以下の小麦粉を、該振出し孔から振り出して対象に適用することを含む、小麦粉の適用方法を提供する。
また本発明は、振出し孔を有する振出し容器に充填された10%粒径D10が18μm以上かつ90%粒径D90が400μm以下の小麦粉を、該振出し孔から振り出して対象に適用することを含む、小麦粉の飛散またはダマ生成を抑制する方法を提供する。
市販の小麦粉(薄力粉:日清製粉製「フラワー」;D10=11μm、D90=112μm)1kgを容器に入れ、ハンドミキサーで攪拌しながら霧吹きで加水し、その後恒温槽で乾燥した。加水量、攪拌中の温度、および乾燥時間の各種条件を変更して造粒し、さらに必要に応じて、得られた造粒小麦粉を篩を用いて取り分けることで、表1に示す粒度分布を有する小麦粉を製造した。製造した小麦粉の粒度分布および平均粒径(粒径の体積平均径:MV)を、マイクロトラックMT3000II(日機装株式会社)を用いたレーザー回折・散乱法により測定した。
各小麦粉を、それぞれ直径50mm、高さ120mmの円筒容器に100gずつ充填した後、該容器の天面に直径5mmの振出し孔を5個有する直径50mm、厚さ0.2mmの円形プラスチック板をはめ込み、振出し容器入り小麦粉を製造した。
製造例1〜11の各容器入り小麦粉を、水平に設置した平滑な平面の上に振り出した。振出しは、平面中央に設けた目印の直上10cmから1回行った。振り出された小麦粉の量を測定して振出し量とした。また、振り出された小麦粉が散らばった範囲の外縁と平面中央目印を結ぶ線分の長さを測定して、その最大値を飛散範囲とした。各小麦粉について計10回の測定を行い、振出し量および飛散範囲の平均値を求めた。結果を表1に示す。なお、参考例として市販の小麦粉(日清製粉製「フラワー」)での結果を示す。
振出し容器の振出し孔の寸法を表2のとおりに変更した以外は、製造例4と同様の手順で振出し容器入り小麦粉を製造した(製造例12〜23)。各容器入り小麦粉について、試験例1と同様の手順で振出し量および飛散範囲を測定し、10回の測定の平均値を求めた。結果を表2に示す。なお、表2には製造例4の結果を再掲する。
Claims (11)
- 振出し孔を有する振出し容器に充填された、10%粒径D10が18μm以上かつ90%粒径D90が400μm以下の小麦粉である容器入り小麦粉。
- 前記振出し容器が最大幅4〜12mmの振出し孔を2〜9個有する、請求項1記載の容器入り小麦粉。
- 前記小麦粉が造粒小麦粉であるか、又は造粒小麦粉と非造粒小麦粉との混合物である、請求項1又は2記載の容器入り小麦粉。
- 前記小麦粉が、D10が25μm以上かつD90が400μm以下である、請求項1〜3のいずれか1項記載の容器入り小麦粉。
- D90/D10が7〜13である、請求項1〜4のいずれか1項記載の容器入り小麦粉。
- 前記小麦粉の平均粒径が40〜200μmである、請求項1〜5のいずれか1項記載の容器入り小麦粉。
- 最大幅4〜12mmの振出し孔を2〜9個有する振出し容器に充填された10%粒径D10が18μm以上かつ90%粒径D90が400μm以下の小麦粉を、該振出し孔から振り出して対象に適用することを含む、小麦粉の適用方法。
- 最大幅4〜12mmの振出し孔を2〜9個有する振出し容器に充填された10%粒径D10が18μm以上かつ90%粒径D90が400μm以下の小麦粉を、該振出し孔から振り出して対象に適用することを含む、小麦粉の飛散またはダマ生成を抑制する方法。
- 前記小麦粉が造粒小麦粉であるか、又は造粒小麦粉と非造粒小麦粉との混合物である、請求項7又は8記載の方法。
- D90/D10が7〜13である、請求項7〜9のいずれか1項記載の方法。
- 前記小麦粉の平均粒径が40〜200μmである、請求項7〜10のいずれか1項記載の方法。
