Abstract
PURPOSE: To provide a jelly food having the tissue similar to fruit pulp, by freezing and thawing a sol containing fruit juice, edible cellulosic substance, and a gelatinizing agent.
CONSTITUTION: A mixture composed of (A) 2W20% fruit juice such as natural or artificial fruit juice, concentrated fruit juice, puree, fruit pulp paste, etc., (B) 0.1W0.9% cellulosic material such as fruit pulp, powdery cellulose, etc., and (C) 0.5W1.0% gelatinizing agent such as agar, furcellaran, carrageenan, pectin, gelatin, etc., is added with sugar, acidulant, etc., dissolved in water, homogenized, and heat sterilized. After cooling, the solution is filled in a proper container, frozen by cooling at -20W-40°C, and thawed at 0W40°C to obtain a jelly dessert food having the tissue similar to fruit pulp.
