Abstract

PURPOSE: To prepare fruits, vegetables or their processed products which can be stored for a long period without losing their natural appearence, etc., by coating sugared fruits, etc. with a film of a gel-forming substance containing sugar.
CONSTITUTION: Sugared fruits, etc. containing 15W45% of water and 30W70% of sugar, are coated with a gel-forming substance containing 30W70% of sugar. The coating layer is gelled either by immersing in 0.1W10% polyvalent metal salt solution (when the gel-forming substance gels with polyvalent metal salts; e.g. carrageenan, etc.) or by immersing in a dehydrated oil cooled to 0W15°C (when the substance is a thermo-reversible gel, e.g. gelatin, etc.). The coating operation may be repeated to form a multi-layered coating.
