Abstract

PURPOSE: To obtain an astringent-free banana without darkening the peel, by spraying an alcohol solution to a banana post-ripened for a definite period, and packaging the banana with a film.
CONSTITUTION: Green banana fruits are stored in a post-ripening chamber kept at 18W20°C for from several days to one week. After the ripening, the bunch of banana is divided into proper clusters each containing about 5W6 fruits 1. Each fruit 1 is sprayed with a proper amount of an alcohol solution, and sealed in a bag 2 made of a transparent film. Tannins existing in the green banana can be solidified completely by this process, to afford an astringent-free sweet banana.
