Abstract
PURPOSE: Sweet bean jam containing a sugar alcohol and reduced starch hydrolyzate is covered with a coat containing a preventive against starch deterioration and the resultant product is wrapped together with a deoxidizer with a film of barrier material, whereby cakes stuffed with sweet bean jam are stored for a long period of time.
CONSTITUTION: Sweet bean jam containing 5W30wt% based on the total weight, of a mixture of a sugar alcohol such as maltitol and a reduced starch hydrolyzate containing 3 or more glucose units at a ratio of 3/7W7/3 is covered with a coat, when necessary, containing an agent for preventing starch deterioration such as sucrose fatty acid ester or propylene glycol to make a cake stuffed with sweet bean jam. Each of them is wrapped together with a deoxidizer with a synthetic resin film hindering air permeation tightly. The wrapping process is applied to "yatsuhashi" (cinnamon-seasoned cracknel) stuffed with sweet bean jam, "manju" (a bun with a bean jam filling), "dora-yaki" (a bean-jam pancake) or "monaka" (bean-jam filled wafers).
