Abstract
1465263 Mould release agent NORTHERN FOODS Ltd 3 April 1974 [10 Feb 1973] 6644/73 Heading A2B Foodstuffs comprising at least one gelled component e.g. blancmange, egg custard or gelled yoghurt are packed into a container in the bottom of which is previously placed a layer of a solution containing xanthan gum such that on inverting the mould and puncturing the base or removing a tear off strip the xanthan gum layer is easily released to demould the gelled foodstuff. The xanthan gum may be dispersed in milk or water to about 1% by wt. additionally with a gellable starch and thus may act as a sauce to the gelled component. A foodstuff coated with a solution containing xanthan gum is claimed per se.
