Abstract

CONSTITUTION:The aimed frozen food obtained by covering a frozen food (e.g. ice cream) with a jelly, prepared by using one or two or more of natural or synthetic pastes, such as pectin, carrageenan, alginic acid, furcellaran, agar, gelatin, xanthan gum, locust bean gum, guar gum, tamarind seed extract, karaya gum, gum arabic, pullulan, tragacanth gum, gelan gum, tara gum, cassia gum, starch, alginic acid propylene glycol ester, carboxymethyl cellulose, methyl cellulose or sodium polyacrylate, and having 10-40% moisture content.
