Abstract

PURPOSE: To obtain the titled composition useful as an edible dye industrially and advantageously, by bringing an extract from a fruit of a Cape jasmine into contact with a porous synthetic resin, adsorbing and removing the coexisting yellow pigment crocin, and reacting the resultant substance with β-glucosidase.
CONSTITUTION: An aqueous solution of an extract fron a fruit of a Cape jasmine is brought into contact with a porous synthetic resin, preferably a nonpolar or intermediately polar, having a specific surface area ≥100m2/g and a porosity ≥0.50cm3/g to adsorb a yellow pigment crocin thereon. The remaining aqueous solution containing the unadsorbed components is collected and then reacted with β-glucosidase (a microorganism capable of producing the same) to give the aimed composition. The resin is brought into contact with methanol of concentration ≥50% to elute the adsorbed components, e.g. the yellow pigment, which is then obtained simultaneously with the regeneration of the resin.
