Abstract
PURPOSE: To purify an aqueous solution of crude α-glycosyl steviol glycoside which is a highly water-soluble sweetener, easily, by treating the solution with a specific adsorbent.
CONSTITUTION: An aqueous solution of α-glycosyl steviol glycoside containing water-soluble saccharides and prepared by reacting stevioside with an α-glycosyl saccharide compound in the presence of α-glucosyl transferase, is brought into contact with a porous synthetic adsorbent (e.g. porous styrene-divinylbenzene polymer) to adsorb the α-glycosyl steviol glycoside selectively. The adsorbed glycoside is desorbed with a solvent such as a mixture of alcohol and water, to obtain a high purity α-glycosyl steviol glycoside. The objective sweetener can be obtained from the glycoside as white powder.
