Abstract

PURPOSE: To prepare an assembled food, by mixing a proteinaceous substance or a polysaccharide substance with roasted powder of an eggshell or shell or a shellfish, applying the resultant mixture to the surfaces of two or more pieces of a food, and bonding the two or more pieces of food to one another.
CONSTITUTION: A protein having 30mol or more carboxyl groups per 105 gram molecules and a hydrolyzed substance thereof or a polysaccharide having 0.3 or more carboxyl group per polymerization unit and a hydrolyzed substance thereof capable of being a jelly in an aqueous solution or dispersion with a solid concentration of 30wt% or less are mixed with roasted powder of an eggshell or shell of a shellfish to give adhesive composition. The resultant adhesive composition is then applied to the surfaces to be bonded of two or moer pieces of the same or different foods.
