Abstract

CONSTITUTION: Soybean milk boiled by conventional method is cooled to about 20°C, and charged together with a coagulant having high rate of coagulation such as calcium sulfate, magnesium chloride, etc. in a sales vessel, and mixed in the vessel. The vessel is sealed and heated at 80°C for 50min in a water bath, etc. to coagulate the content.
