Abstract

PURPOSE: To prepare soya milk for drinking, free of astringency, by adding a fatty acid ester to soya milk, homogenizing the mixture, and heat treating at ≥70°C.
CONSTITUTION: A fatty acid ester (sucrose fatty acid ester, propylene glycol fatty acid ester, glycerin fatty acid ester, sorbitan fatty acid ester) is added to soya milk in an amount of at least 0.02wt%, and simultaneously or immediately, the mixture is homogenized within 1min by an apparatus capable of frothing and agitating by a turbulent air flow of ≥190m/min or an apparatus having a homogenizing capability comparable to or higher than the above apparatus. The product is heat treated at ≥70°C.
