Abstract

PURPOSE: To prepare a whipped margarine having fine bubbles and uniform good tissues, by blowing a gas into a margarine mix at a specific site of a pipe comprising a Venturi tube or an orifice.
CONSTITUTION: A gas is blown into a margarine mix from a gas inlet provided at the narrowest part of a Venturi tube or immediately before an orifice in a mix feed pipe. The mix is then cooled and kneaded under pressure and released to atmospheric pressure during or after the kneading, then preferably aged, and packed to give the desired margarine. The gas is preferably blown at the outlet side of the feed pump of the mix to adjust the internal pressure of the system to 25W50 kg/cm2.
