Abstract
PURPOSE: To obtain fresh noodles having elongated storage life, by adding a specific amounts of salt and water to flour, and storing the fresh noodles prepared from the mixture in a gas-tight vessel having high gas-barrier properties together with a deoxygenating agent.
CONSTITUTION: Flour for the preparation of noodles is mixed with 3W6wt% of salt and 24W30wt% of water to obtain dough, which is rolled and slitted or extruded to obtain fresh noodles. The noodles are stored together with a deoxygenating agent such as iron powder or an organic deoxygenator in a vessel having high gas-barrier properties. The sufficient deoxygenating effect attained by the deoxygenating agent improves the preservability of the fresh noodles.
