Abstract

PURPOSE: A fried rice ball, storable for a long time and scarcely collapsing the shape, prepared by applying a batter coating for tempura to the whole surface of a rice ball with a filling in the center.

The batter coating 3 for tempura is then applied to the whole surface of the ball 2, and the coated ball 2 is fried in an edible oil. The permeation of the coating 3 into the spaces between rice grains prevents the collapse of the shape, improves the color and permits the storage for a long time due to the enclosed interior and filling 1 of the ball.
