Abstract
PURPOSE: To prepare a food having shrimplike taste from inexpensive fish meat, by adding a specific amount of thin pieces of boiled fish paste having a specified thickness to a paste product of fish meat, and, if necessary, by adding krills and shrimps to it.
CONSTITUTION: Thin pieces of boiled fish paste having 0.1W7mm thickness is blended with seasoned ground fish meat in a weight ratio of 70:30W30:70, and, if necessary, blended with krills or shrimps. The prepared material is boiled or steamed to give a shrimplike food. Thin pieces of boiled fish paste with high elasticity is preferable as the thin pieces of boiled fish paste. Seasoned ground fish meat obtained by adding salt, a seasoning, etc. to sliced pieces of fish meat or frozen ground fish meat followed by grinding can be used as the seasoned ground fish meat. The raw materials of the thin pieces of boiled fish paste and the seasoned ground fish meat may be the same or different. A pick conger, Japanese bluefish, saury-pike, lizard fish, croaker, walleye pollack, etc. may be used, especially frozen ground meat of walleye pollack has a merit that it can be obtained with ease.
