Abstract
PURPOSE: To prevent the decomposition of mayonnaise, and to prepare a frozen salad without degrading the taste and flavor due to thawing, by using a paste made through kneading wheat flour, butter or margarine.
CONSTITUTION: Vegetables of salad materials, e.g. potatoes, onions, or carrots, are mixed with mayonnaise made from oil, egg yolk, and vinegar, and seasonings. Wheat flour and butter or margarine are added to form the mixture paste, and the resulting paste is kneaded with white sauce. The kneaded material is vacuum-packed into a heat-resistant polyvinyl bag, and instantaneously frozen at about -200°C for 5W7min.
