Description
ー価は、0.007Kcal/gしかない。これは、2011年にFDAにより食品材料として許可された。D−アルロースは、その甘味度により、また、発熱量がスクロースのわずか0.3%しかないという理由で、食品のための理想的なスクロース代用品として提案されている。フルクトースとは反対に、ヒトによって摂取されると、アルロースは、一部が吸収されてエネルギーに代謝され、一部は不変のまま尿及び糞便に排泄される。

D−アルロースの使用にも関する。
各種甘味料(すなわち、本発明のD−アルロースシロップ及び様々なグルコース及び/又はフルクトースシロップ)から、以下の表1に示すキッチンエイド(kitchen aid)のミキサーボウルにおいて乾燥材料を混合した後、カノーラ油と一緒に75℃のシロップを乾燥ブレンドに添加して、滑らかなボール状形態が得られるまで材料を混合することにより、ドウバーを調製した。次に、ダウボールの各々をシート状にして、室温まで冷却させてから、切片に切断した。

実施例1のドウバーを試験して、製造後の様々な時点でそのテクスチャーを評価した。この目的のために、Reference CHOC2/P4の下で、Stable MicroSystemsにより記載される方法に従い、5kgロードセル及び4mmプローブと共に、Texture Technologies Corporationにより供給されるTA HD Plus Texture Analyzerを用いて、それらの硬さを測定した。
Claims (7)
- 固体食品であって、
D−アルロースシロップと、前記固体食品の乾物含量の15〜45重量%の天然タンパク質とを含み、
前記D−アルロースシロップが、水中のD−アルロース及びフルクトースの濃縮溶液からなり、前記D−アルロースシロップの乾物含量が75〜85重量%であり、フルクトースは、前記D−アルロースシロップの乾物含量の2〜45重量%を占める、固体食品。 - 前記D−アルロースシロップの乾物含量が82重量%である、固体食品。
- 前記D−アルロースシロップが、前記食品の総量に基づき、前記食品の15〜60重量%を占めることを特徴とする、請求項1又は2に記載の固体食品。
- 前記天然タンパク質が、植物タンパク質、乳(乳清を含む)タンパク質及びこれらの混合物から選択されることを特徴とする、請求項1〜3のいずれか一項に記載の固体食品。
- 加水分解タンパク質を一切含有しないことを特徴とする、請求項1〜4のいずれか一項に記載の固体食品。
- ドウバー、ビスケット又はクッキーから選択されることを特徴とする、請求項1〜5のいずれか一項に記載の固体食品。
- 食事療養者、運動選手及びボディビルダーのためのタンパク質補給剤としての、請求項1〜6のいずれか一項に記載の固体食品の使用。
