Description
本発明の一実施形態は、海洋動物の殺菌方法を提供する。当該殺菌方法は、海水に、電気分解された大気を混合させることによって、酸素富化海水を生成する工程;上記酸素富化海水を電気分解することによって、殺菌水を生成する工程;および上記殺菌水に海洋動物を接触させる工程を含んでいる。上記殺菌水は、NOCl、次亜塩素酸水(HOCl)、次亜塩素酸イオン(OCl−)、OHラジカルおよび一重項酸素を含んでいる。殺菌水に含まれているこれらの成分が主に、殺菌作用を示す。いずれの成分も、非常に高い酸化力(したがって高い殺菌作用)を示すため、海洋動物に付着している細菌などと速やかに反応して、極めて短時間に消費される。また、一重項酸素は、海水および大気の成分と反応して、NaCl、NOCl、次亜塩素酸水、次亜塩素酸イオンおよびOHラジカルを生成し得る。したがって、上記殺菌水において、生成された一重項酸素は部分的に、NOCl、次亜塩素酸水、次亜塩素酸イオンおよびOHラジカルに変換される。以上のことから、上記殺菌水は、生成から海生動物の接触までの間に、NOCl、次亜塩素酸水、次亜塩素酸イオン、OHラジカルおよび一重項酸素を含んでいると説明され得る。
本発明の一実施形態は、殺菌装置を提供する。当該殺菌装置を図1を参照して説明する。図1は、本発明の一実施形態に係る殺菌装置10の構成を示す模式図である。
本発明の各実施形態の概要は以下の通りである。
(1)海水に、電気分解処理した大気を混合させることによって、酸素富化海水を生成する工程;上記酸素富化海水を電気分解処理することによって、殺菌水を生成する工程;および上記殺菌水を海洋動物に接触させる工程を含んでおり、上記殺菌水は、NOCl、次亜塩素酸水、次亜塩素酸イオン、OHラジカルおよび一重項酸素を含んでいる、非加熱食品としての海洋動物の、殺菌方法。
(2)海水および大気の混合比は、1:5〜1:15(v/v)である、(1)に記載の殺菌方法。
(3)上記海洋動物は貝類である、(1)または(2)に記載の殺菌方法。
(4)大気と混合する前の上記海水、または上記海洋動物に接触させる前の上記殺菌水に、紫外光を照射する工程をさらに含んでいる、(1)〜(3)のいずれかに記載の殺菌方法。
カキの成育に適する環境から任意に選択した、日本国内の場所において、カキを、春から夏の季節を選んで、食用カキと類似の条件(季節以外)のもとに成育させた。当該場所として、互いに数百km離れた環境の異なる2か所を選択した。各場所において、開始時期をずらした2回(すなわち計4回)の成育を行った。なお、各場所(海域)を管理している個人または団体から、当該場所をカキの成育試験に使用する許可を得た。複数の網カゴを連ねた綱を準備し、当該網カゴにカキを入れた。綱を海上に浮かべたうきに吊るして、カキを海中に入れた。カキが成育環境に十分になじんだ約14日後に、海中から綱を引き上げた。それぞれの成育において、カキを2群に分けた。一方の群(未処理群)を、海中から引き揚げた後に、特に手を加えずに密閉容器につめた。他方の群(処理群)を、海中から引き揚げた後に、以下に説明する殺菌処理を施した。
処理群として選択したカキをさらに2群に分けて、図1に例示した殺菌装置10の殺菌槽9に入れた。一方の群を殺菌槽9に入れた後に、1時間にわたって殺菌装置10を運転させた。このときの大気および海水の混合比率は、1:5(v/v)であった。他方の群を殺菌槽9に入れた後に、2時間にわたって殺菌装置10を運転させた。ポンプP1の取水口およびポンプP3の排水口を、カキを成育させた場所のすぐ近くに入れた。つまり、処理群および未処理群におけるカキを、成育の開始以降には、他の場所から得られた海水に触れさせていない。殺菌装置10を1時間にわたって運転させた後に、殺菌槽9において、カキを無菌的に密閉容器につめ(処理群1)、殺菌装置10を1時間にわたって運転させた後に、殺菌槽9において、カキを無菌的に密閉容器につめた(処理群2)。
各成育によって得られたカキの、非加熱食品としての安全性評価を、外部(株式会社 食品微生物センター)に委託した。委託先から受け取った報告書の内容を表1にまとめる。

Claims (4)
- 非加熱食品としての海洋動物の、殺菌方法であって、
海水に、電気分解された大気を混合させることによって、酸素富化海水を生成する工程;
上記酸素富化海水を電気分解することによって、一重項酸素の存在比を上昇させた殺菌水を生成する工程;および
上記殺菌水を上記海洋動物の外表面および器官内に、10分間〜2時間、接触させる工程を含んでおり、
上記殺菌水は、NOCl、次亜塩素酸水、次亜塩素酸イオン、OHラジカルおよび一重項酸素を含んでおり、
上記海洋動物は、生存しており、かつ海水から酸素を体内に取り込む器官を有している海に生息する動物のうち、人間の食用に供する動物であり、
殺菌方法。 - 海水および大気の混合比は、1:5〜1:15(v/v)である、請求項1に記載の殺菌方法。
- 上記海洋動物は貝類である、請求項1または2に記載の殺菌方法。
- 大気と混合する前の上記海水、または上記海洋動物に接触させる前の上記殺菌水に、紫外光を照射する工程をさらに含んでいる、請求項1〜3のいずれか1項に記載の殺菌方法。
