Description
得られるフレーバー分散液は、可食製品に、噴霧、コーティング、浸漬などの好都合な手段によって、可食製品に提供し得る。
本開示は、特定の実施形態を記載する以下の非限定的な実施例を参照してさらに記載される。すべての部は重量による。
オレイン酸およびオレイン酸ナトリウムの適切な割合の判断。
ヒマワリ油中でオレイン酸およびオレイン酸ナトリウムの様々な割合を組み合わせ、どの比率が適切であるかを判断した。油中で、透明で、均質なオレイン酸/オレイン酸ナトリウムの混合物の溶液が望ましい。オレイン酸ナトリウムおよびオレイン酸の全ての混合物を、4.8重量%で油に添加し、Brookfield粘度計、スピンドルNo. 62および63@30rpmで撹拌した。
最良の結果(透明溶液であり、より高いが実施可能な粘度)は、60:40で見出された。
クラッカーへの使用
15部のヒマワリ油、4部のチョリソー香味料粉末、および1部の60:40オレイン酸:オレイン酸ナトリウム混合物をブレンドし、フレーバーが付与されたコーティングを調製した。
香味料を80部のクラッカーにディスクスプレーを回転することにより適用した。試験は、香味料組成物を何時間の間放置したとしても、香味料の分布が非常に均質であることを明らかにした。
対照的に、オレイン酸:オレイン酸ナトリウム混合物の不在以外は同一である香料料組成物は、調製の数分以内に層に分離し始め、噴霧は、非常にムラのある香味料分布をもたらした。最終的に組成物は完全に噴霧できなくなった。
フレーバー濃縮物の調製
以下の成分をブレンドすることにより、濃縮物を調製した:
40部のチョリソー調味料粉末
54.7部のヒマワリ油
5.3部の60:40 オレイン酸/オレイン酸Naミックス

- 可食製品の表面に固形香味料を適用する方法であって、オレイン酸およびオレイン酸ナトリウムの存在下での固形香味料の非水溶性連続媒体への分散、および製品への局所適用を含み、オレイン酸のオレイン酸ナトリウムに対する重量比が、80:20〜54:46であり、オレイン酸およびオレイン酸ナトリウムの合計割合が、連続媒体、オレイン酸/オレイン酸ナトリウム、および固形香味料の合計重量の1重量%〜20重量%の範囲である前記方法。
- オレイン酸のオレイン酸ナトリウムに対する重量比が、70:30〜56:44、より特に62:38〜58:42である、請求項1に記載の方法。
- 固形香味料および連続媒体の割合が、5重量%〜50重量%の固形香味料であり、50重量%〜95重量%の連続媒体である、請求項1に記載の方法。
