Abstract
Description
(1)バニラ様ベース香料およびバニラエキスからなる群より選択される少なくとも1種のバニラ風味香料と、酒精強化ワイン類の固形成分とを含むバニラ様香料組成物。
(2)バニラ様ベース香料が、バニリン、エチルバニリン、p−クレゾール、4−ビニルグアイアコール、グアイアコール、アニスアルデヒド、フェニル酢酸、桂皮酸、オクタン酸、ノナン酸、デカン酸、γ−ブチロラクトン、アセチルバニリン、ヘリオトロピン、バニトロープ、ベラトルアルデヒド、ジヒドロクマリン、5−メチルフルフラール、アセトフェノン、マルトール、シクロテン、ベンズアルデヒド、桂皮酸エチル、桂皮酸メチルおよびアセトインからなる群より選択される少なくとも1種の化合物を含む上記(1)に記載のバニラ様香料組成物。
(3)酒精強化ワイン類の固形成分が、0.01〜45質量%の割合で含まれる上記(1)または(2)に記載のバニラ様香料組成物。
(4)バニラ様ベース香料およびバニラエキスからなる群より選択される少なくとも1種のバニラ風味香料を含む経口組成物10000質量部に対して、酒精強化ワイン類の固形成分を0.00001〜450質量部の割合で添加する飲食品のバニラ風味改善方法。
バニリンを0.3質量%、表1に示すバニラ様ベース香料を0.1質量%、シェリー酒(ドライ・アモンティリャードロス・アルコス、Brix値は2、Emilio Lustau(エミリオ・ルスタウ)製)を2質量%、エタノールを30質量%、および水を67.6質量%の割合で混合して十分に撹拌し、バニラ様香料組成物を得た。
表2に記載の成分を表2に記載の割合で使用した以外は、実施例1と同様の手順でバニラ様香料組成物を得た。表2に記載のシェリー酒濃縮物は、実施例1で用いたシェリー酒の水分量が1/10になるまで濃縮したものである(Brix値は20)。
表2に示すように、シェリー酒およびシェリー酒濃縮物を用いなかった以外は、実施例1と同様の手順でバニラ様香料組成物を得た。
Claims (3)
- バニラ様ベース香料およびバニラエキスからなる群より選択される少なくとも1種のバニラ風味香料と、
酒精強化ワイン類の濃縮物の固形成分と、
を含み、
前記酒精強化ワイン類が、固形成分に占める糖類以外の固形成分を50質量%以上の割合で含むシェリー酒またはポートワインであり、
前記酒精強化ワイン類の濃縮物の固形成分が、0.01〜45質量%の割合で含まれるバニラ様香料組成物。 - 前記バニラ様ベース香料が、バニリン、エチルバニリン、p−クレゾール、4−ビニルグアイアコール、グアイアコール、アニスアルデヒド、フェニル酢酸、桂皮酸、オクタン酸、ノナン酸、デカン酸、γ−ブチロラクトン、アセチルバニリン、ヘリオトロピン、バニトロープ、ベラトルアルデヒド、ジヒドロクマリン、5−メチルフルフラール、アセトフェノン、マルトール、シクロテン、ベンズアルデヒド、桂皮酸エチル、桂皮酸メチルおよびアセトインからなる群より選択される少なくとも1種の化合物を含む請求項1に記載のバニラ様香料組成物。
- バニラ様ベース香料およびバニラエキスからなる群より選択される少なくとも1種のバニラ風味香料を含む経口組成物10000質量部に対して、酒精強化ワイン類の濃縮物の固形成分を0.00001〜450質量部の割合で添加する飲食品のバニラ風味改善方法であって、
前記酒精強化ワイン類が、固形成分に占める糖類以外の固形成分を50質量%以上の割合で含むシェリー酒またはポートワインである、
