- 7−[4,5−ジヒドロキシ−6−(ヒドロキシメチル)−3−(3,4,5−トリヒドロキシ−6−メチルオキサン−2−イル)オキシオキサン−2−イル]オキシ−5−ヒドロキシ−2−(4−ヒドロキシフェニル)クロメン−4−オンを10〜100ppm含む風味改良組成物であって、前記風味改良が、苦味を減少させる及び/又は甘味を増加させることを含む、前記風味改良組成物。
- 食料品又は飲料に7−[4,5−ジヒドロキシ−6−(ヒドロキシメチル)−3−(3,4,5−トリヒドロキシ−6−メチルオキサン−2−イル)オキシオキサン−2−イル]オキシ−5−ヒドロキシ−2−(4−ヒドロキシフェニル)クロメン−4−オンを10〜100ppm添加することによって、食料品又は飲料の苦味を減少させる又は隠す、及び/又は食料品又は飲料の甘味を増加させる方法。
