Description

バッチC: 5g スクロース
ビールの酸化安定性への影響を調べるために、市販のダイエットビール(炭水化物をほとんど含まない)にトレハルロースを混合した(本発明に基づき)。比較試料では市販のダイエットビールにイソマルツロース(対照)を混合し、または添加物のないダイエットビールを使用した。すべての試料に所定のビール老化を施した。ESRによる酸化安定性の測定をビール老化の初めと終りに行った。

Claims (17)
- 抗酸化作用成分としてトレハルロースまたはトレハルロース含有シロップを含む、食品または飼料のための抗酸化剤であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記抗酸化剤。
- 食品または飼料に添加される唯一の抗酸化作用性補助物質としてトレハルロースまたはトレハルロース含有シロップを含む、請求項1に記載の抗酸化剤。
- 食品または飼料が不飽和脂肪酸から選択される少なくとも1つの酸化に敏感な成分を含む、請求項1または2に記載の抗酸化剤。
- 不飽和脂肪酸がω-3脂肪酸およびω-6脂肪酸から選択される、請求項3に記載の抗酸化剤。
- 食品が
i. 牛乳加工品および乳製品、
ii. デザート、
iii. 乳脂加工品、混合脂肪製品、食用脂、食用油、
iv. ベーキング製品、
v. スプレッド、
vi. インスタント製品および醸造製品、
vii. 果物製品または調理品、
viii. シリアル、ミュースリおよびシリアル混合物ならびに調理済みシリアル含有製品、

- 食品がビール、ビール混合飲料、無アルコールもしくは減アルコールビール、または無アルコールもしくは減アルコールビール混合飲料である、請求項1〜5のいずれか1項に記載の抗酸化剤。
- 飼料が動物食餌、動物食餌用粗混合物、デンプン強化、タンパク質強化または脂肪強化飼料、濃厚飼料または高カロリー飼料である、請求項1〜4のいずれか1項に記載の抗酸化剤。
- 食品または飼料に添加して酸化安定性を改善するための、トレハルロースまたはトレハルロース含有シロップを含む抗酸化剤であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記抗酸化剤。
- 食品または飼料に添加して耐老化性および/または貯蔵安定性を改善するための、トレハルロースまたはトレハルロース含有シロップを含む抗酸化剤であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記抗酸化剤。
- 少なくとも60重量%のトレハルロースを含むトレハルロース含有シロップを含む、請求項1〜11のいずれか1項に記載の抗酸化剤。
- 抗酸化剤としてのトレハルロースまたはトレハルロース含有シロップの使用であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記使用。
- 食品または飼料の酸化安定性の改善のためのトレハルロースまたはトレハルロース含有シロップの使用であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記使用。
- 食品または飼料の不飽和脂肪酸の酸化を減少させるためのトレハルロースまたはトレハルロース含有シロップの使用であって、該トレハルロース含有シロップが少なくとも60重量%のトレハルロースを含む、上記使用。
