Description
1− 凝結可能なタンパク質、不溶性繊維および/またはエンドウまたはエンドウの粉の澱粉を分離してエンドウの水溶性エキスを得るステップと、
2− 特に抗トリプシン作用のある要素から可溶性ペプチドを除去するステップと、
3− 前記エキス中に存在するオリゴ糖の脱フルクトシル化を可能にする条件下で、たとえばサッカロマイセスセレビシエ(Saccharomyces cerevisiae)から生じるインベルターゼを前記エキスに対して作用させるステップと、
4− このようにして得られた脱フルクトシル化したエキスを回収するステップ
とを含むことができる。
− 使用する原材料は、好ましくは農産物加工産業の廃棄物であり、
− 有利には、エネルギーをそれほど消費しない膜による精製技術を使用し、
− 修正されていない微生物を使用して、自然なバイオテクノロジーを用いるかぎり、
先行技術によってプレバイオティクスを得る方法と比較して無視できない環境面での利点がある。
本試験の目的は、本発明(脱フルクトシル化したオリゴ糖:OD)から生じた生成物の消化耐性を、すでに市場に存在する2つのプレバイオティクスの消化耐性およびプラセボの消化耐性と比較することである。
本試験に参加したボランティアは、1回の服用でオレンジジュースに溶かした有効成分20gを無作為に消費し、各服用後は48時間の休止間隔をおき、合計で4回服用するようにした。
− 脱フルクトシル化したオリゴ糖(OD:本発明の生成物)、
− β−ガラクトオリゴ糖(β−GOS)、
− フルクトオリゴ糖(FOS)、
− ショ糖(プラセボ)
であった。
− 腹痛、
− 鼓張、
− 腹部の雑音(グル音、ゴロゴロ鳴る音など)、
− 鼓腸、
− 吐気、吐出または胸やけ、
− 便意
に関して発生頻度(「症状なし」の1から「症状が頻繁」の5までの点数)および強度(「症状が感じられない」の1から「重大および/または容認しがたい症状」の5までの点数)を問う質問により評価した。
試験結果は以下の表1のとおりであり、プラセボの消化耐性と比較したOD、β−GOSおよびFOSの消化耐性の評価に基づいて各パラメータに対して得られた点数の平均をまとめたものである。
− ODの耐性は、(症状全般に対する点数が最も低い)プラセボと比較して(現時点での市場のプレバイオティクスでは最も高い耐性を示す生成物である)β−GOSと同等の耐性であった。
− ODは(症状全般に対する点数が最も高く、依然として耐性が最も低い生成物である)FOSよりも消化耐性が良好であることがわかった。
Claims (7)
- タンパク質およびペプチドを5重量%未満含み、メリビオース、マンニノトリオースおよびマンニノテトラオースを含有し、前記マンニノテトラオース/前記メリビオースの重量比率が少なくとも1:1、および/または前記マンニノトリオース/前記マンニノテトラオースの重量比率が0.3:1〜4:1である脱フルクトシル化したエンドウの水溶性エキス。
- エンドウから得られることを特徴とする、請求項1に記載のエキス。
- 少なくとも以下の一連のステップ:
− 凝結可能なタンパク質、不溶性繊維および/またはエンドウまたはエンドウの粉の澱粉を分離してエンドウの水溶性エキスを得るステップ、
− 可溶性ペプチドを除去するステップ、
− 前記エキス中に存在するオリゴ糖の脱フルクトシル化を可能にする条件下で、インベルターゼを前記エキスに対して作用させるステップ、
− このようにして得られた脱フルクトシル化した前記エキスを回収するステップ
を含む、請求項1および2のいずれか一項に記載の脱フルクトシル化したエンドウの水溶性エキスの調製方法。 - 請求項1および2のいずれか一項に記載の脱フルクトシル化したエンドウの水溶性エキスのプレバイオティクス物質を製造するための使用。
- 大腸の細菌組成の修正、ビフィズス菌および乳酸菌の刺激、有害な細菌およびクロストリジウム属、大腸菌などの病原菌の相対量の減少、内腔 pHの低下、ミネラル分(特にカルシウム)吸収率の増大、解毒作用のある細菌酵素の刺激、毒性の細菌酵素の抑制、排泄を促す胆汁酸塩 の不溶化、胆汁酸変換の阻害、フェノールおよびインドールなどの有害化合物生成の減少、便秘の減少、感染性下痢のリスクの軽減、炎症性腸疾患の減少、短鎖脂肪酸の生成の刺激、アポトーシスの刺激、大腸癌の予防、腸バリアの強化、細菌転座および/または 細菌毒素の減少、満腹ホルモンの分泌の刺激、コレステロール率の低下、体重の減少、体重増加の低下、食物摂取の低下、脂質生成の減少および/または代謝障害の症状の減少を目的とする組成を製造するための、請求項1および2のいずれか一項に記載の脱フルクトシル化したエンドウの水溶性エキスの使用。
- 少なくとも1つの甘味料ならびに請求項1および2のいずれか一項に記載の脱フルクトシル化したエンドウの水溶性エキスを含有する炭酸飲料。
- 請求項1および2のいずれか一項に記載の脱フルクトシル化したエンドウの水溶性エキスを含有する食品。
