Description
(実験例1:加熱試験)
チタン鋼材を陽極酸化することにより得られる酸化チタン皮膜を有するチタン板(表面
積S=50cm2)を食用油劣化防止材として使用した。
(実験例2:フライ試験)
実験例1において、実際にフライヤー内でポテトを揚げた場合の実験を行った。

Claims (5)
- 食用油が流通可能な対向する一対の保護部材の間に、保護部材間の間隔を保持する部材が介在されるとともに、チタン鋼材を陽極酸化することにより得られる酸化チタン皮膜を有するチタン板が前記部材に支持されることにより当該チタン板の表裏面の大半が、調理中の調理油が接触可能になるように前記一対の保護部材の内面とは離間されて配設されていることを特徴とする調理油劣化防止具。
- 前記一対の保護部材は、ステンレス製のパンチングメタルにより構成されていることを特徴とする請求項1に記載の調理油劣化防止具。
- 前記チタン板は、前記一対の保護部材とは取り外しが可能に構成されていることを特徴とする請求項1または請求項2に記載の調理油劣化防止具。
- 請求項1〜請求項3のいずれか1項に記載の調理油劣化防止具を食用油に投入して、当該調理油劣化防止具のチタン板を前記食用油と接触させつつ高温で調理することを特徴とする調理方法。
- 前記食用油は、大豆油、菜種油、パーム油、綿実油、カカオ油、ひまわり油、コーン油、米油、紅花油から選択された植物油、ラード、牛脂から選択された動物油、いわし油、鯨油から選択された一種または二種以上の食用油を含むことを特徴とする請求項4記載の調理方法。
