Claims (32)
- 注入可能な材料(M)からなる食品の製造のためのデポジッタ(1)であって、
・注入可能な材料(M)を収容するための1つの材料容器(2)と、
・1つの材料容器の内部(3)と流体接続関係にある複数のノズル(4)と、
・1つの材料容器の内部(3)を加圧し、1つの材料容器の内部と流体接続関係にある複数のノズルを通して材料を押出すための1つの圧力源(5)とを有し、
各ノズル(4)はノズル開口部或いはノズル絞り部を有し、その開口部断面或いは流れ断面はフレキシブルであり、又、各ノズル(4)は、少なくともノズル開口部の領域において、柔軟な弾性材料を備えることを特徴とするデポジッタ。 - ノズルオリフィスの開口部断面或いは流れ断面(Q)は制御可能であることを特徴とする、請求項1に記載のデポジッタ。
- ノズルオリフィスの開口部断面は、圧力により制御可能であることを特徴とする、請求項2に記載のデポジッタ。
- ノズルオリフィスの開口部断面は、材料容器の内部の絶対圧により制御可能であることを特徴とする、請求項3に記載のデポジッタ。
- ノズル開口部を制御する圧力は、材料容器の内部に収容されノズル開口部の内壁と接触している注入可能な材料によって与えられることを特徴とする、請求項3に記載のデポジッタ。
- ノズルは弁機能を有することを特徴とする、請求項1〜5の一項に記載のデポジッタ。
- ノズルは、静止状態においてノズル開口部を閉止する柔軟な弾性材料を備えることを特徴とする、請求項1〜6の一項に記載のデポジッタ。
- 弾性要素は、ノズル開口部を取り囲んで延びているリング状要素であることを特徴とする、請求項7に記載のデポジッタ。
- ノズルは、流体圧力が変更可能な流体源と流体接続関係にある中空空洞部を有する弾性要素を備えることを特徴とする、請求項1〜8の一項に記載のデポジッタ。
- 圧力源は、材料容器の内部に押し込むことができるディスプレーサであることを特徴とする、請求項1〜9の一項に記載のデポジッタ。
- 圧力源は、圧縮ガスで満たされた加圧容器であり、加圧容器は、材料容器の内部と流体接続しているが、弁により切替可能であることを特徴とする、請求項1〜10の一項に記載のデポジッタ。
- 材料容器は、材料容器の内部から圧縮ガスを排出するためのガス逃がしベントを有することを特徴とする、請求項10又は11に記載のデポジッタ。
- 材料容器のガス逃がしベントはガス逃がし弁であることを特徴とする、請求項12に記載のデポジッタ。
- 材料容器の壁の内、少なくとも幾つかの部分は、柔軟な弾性材料で形成されていることを特徴とする、請求項3〜13の一項に記載のデポジッタ。
- 材料容器の内部の圧力は、材料容器内部の容積によって制御可能であることを特徴とする、請求項14に記載のデポジッタ。
- ノズル全体が、柔軟な弾性材料で形成されていることを特徴とする、請求項1〜15の一項に記載のデポジッタ。
- ノズルは、スリット付き部分、ベローズ状に折り畳まれた部分、或いは手袋の指部のように反転可能な部分、又はこれらの組合せを備えることを特徴とする、請求項16に記載のデポジッタ。
- ノズルは、ノズルを通して充填される材料のための受取り領域を有することを特徴とする、請求項1〜17の一項に記載のデポジッタ。
- 受取り領域は中空の型であることを特徴とする、請求項18に記載のデポジッタ。
- 受取り領域は、受取り流体で満たされたレセプタクルであることを特徴とする、請求項19に記載のデポジッタ。
- ノズルは、ノズル内部の圧力を測定するための少なくとも1個の圧力センサを備えることを特徴とする、請求項1〜20の一項に記載のデポジッタ。
- 材料容器は、材料容器内部の圧力を測定するための少なくとも1個の圧力センサを備えることを特徴とする、請求項1〜21の一項に記載のデポジッタ。
- 注入可能な材料は、チョコレート等の脂質材料であることを特徴とする、請求項1〜22の一項に記載のデポジッタ。
- 柔軟な弾性材料は、エラストマー材料であることを特徴とする、請求項1〜23の一項に記載のデポジッタ。
- ディスプレーサは、押圧部材或いは膜であることを特徴とする、請求項10に記載のデポジッタ。
- 圧縮ガスは、圧縮空気であることを特徴とする、請求項11〜13の一項に記載のデポジッタ。
- レセプタクルは、流体で満たされた桶状部(basin)或いは気体流動床であることを特徴とする、請求項20に記載のデポジッタ。
- 請求項1〜27の一項に記載のデポジッタを使用した注入可能な材料からなる食品の製造方法であって、
・加熱された注入可能な材料を1つの材料容器に準備する段階と、
・1つの材料容器内部を1つの圧力源により加圧する段階と、
・1つの材料容器と流体接続関係にある複数のノズルの流れ及び/又は開口部の断面を変更しながら、複数のノズルを通して材料を押出す段階とを含む方法。 - 少なくとも材料がノズルから押し出されている間は、ノズルから押し出される材料の圧力を測定することを特徴とする、請求項28に記載の方法。
- 測定された材料の圧力を、ノズルの流れ及び/又は開口部の断面の制御の基準として用いることを特徴とする、請求項29に記載の方法。
- 測定された材料の圧力を、材料容器に加える圧力の制御の基準として用いることを特徴とする、請求項29又は30に記載の方法。
- 注入可能な材料は、チョコレート等の脂質材料であることを特徴とする、請求項28〜31の一項に記載の方法。
