Description
このカードランと称せられる増粘多糖類は、不溶性の食物繊維なので、使用に際しては高速攪拌処理をしたり、あるいは水酸化ナトリウムや水酸化カリウムなどのアルカリ剤を添加して水中に均質に分散させるという操作が必要があった。なお、このようにしてアルカリ剤を添加した場合には、食品の味質に影響を及ぼさないよう使用の際に中和・水洗等でそのアルカリ度を低下させるようにしていた。
まず、一般にある物質を水に溶解したとき、水酸イオン[OH- ]を放出するものをアルカリといい、その性質をアルカリ性という。例えば、水酸化ナトリウム[NaOH- ](苛性ソーダ)を水に溶解すると、水酸イオン[OH- ]と、対イオンのナトリウムイオン[Na+ ]とに離れ、この水酸イオン[OH- ]を離し易いものほどアルカリ性が強くなる。したがって、水酸化ナトリウム[NaOH- ]の場合、強アルカリ性となる。これに対して特殊な方法で電気分解された還元水は、その電気エネルギーにより水酸イオン[OH- ]が増えており、酸化還元電位的にはアルカリ性を呈するが、水酸イオンを放出する“対イオン”が存在しないため、化学的なアルカリ剤のような激しいアルカリ反応は起こらず、一般的なアルカリ性の概念とは異なった性質を有する。よって、たとえpH12以上の強アルカリ性のものであっても、化学火傷を起こすおそれがなく、皮膚に対する刺激もなく、通常の水と同様に安全に取り扱うことができる。
Claims (2)
- カードランを、結晶性粘土鉱物が溶解した原料水を電気分解して得られたpH12以上の強アルカリ性の水で溶解または膨潤させ、常温でゲル化させたことを特徴とするゲル状食品組成物。
- カードランを、結晶性粘土鉱物が溶解した原料水を電気分解して得られたpH12以上の強アルカリ性の水で溶解または膨潤させてなる組成物を添加することにより、常温でゲル化させることを特徴とするゲル状食品の製造方法。
