Description
ジグリセリン(水酸基価1293mgKOH/g、平均重合度2.25)100重量部とカプリル酸148重量部とを、加熱ジャケット及び撹拌機を備えた反応器に仕込んだ。これに25重量%水酸化ナトリウム水溶液0.106重量部を添加した後、窒素気流下で撹拌しながら、220℃に昇温して5時間反応させた。次いで、240℃に昇温して更に3時間反応させ、ジグリセリンカプリル酸エステル組成物(酸価0.81mgKOH/g)220重量部を得た。得られたジグリセリンカプリル酸エステル組成物のエステル比率は、モノ:23%、ジ:40%、トリ:27%、その他10%であった。
上記(1)で得られたジグリセリンカプリル酸エステル組成物を順相系シリカゲルカラムクロマトグラフィーにて精製し、ジグリセリンカプリル酸ジエステル、ジグリセリンカプリル酸トリエステルをそれぞれ分取した。操作は以下のように行った。
トリグリセリン(水酸基価1122mgKOH/g、平均重合度3.42)125重量部とカプリル酸144重量部とを、加熱ジャケット及び撹拌機を備えた反応器に仕込んだ。これに25重量%水酸化ナトリウム水溶液0.108重量部を添加した後、窒素気流下で撹拌しながら、220℃に昇温して5時間反応させた。次いで、240℃に昇温して更に3時間反応させ、トリグリセリンカプリル酸エステル組成物(酸価0.34mgKOH/g)240重量部を得た。得られたトリグリセリンカプリル酸エステル組成物のエステル比率は、モノ:25%、ジ:33%、トリ:24%、その他18%であった。
上記(3)で得られたトリグリセリンカプリル酸エステル組成物を順相系シリカゲルカラムクロマトグラフィーにて精製し、ジグリセリンカプリル酸モノエステル、ジグリセリンカプリル酸ジエステル、ジグリセリンカプリル酸トリエステルをそれぞれ分取した。操作は以下のように行った。
デカグリセリン(水酸基価883mgKOH/g、平均重合度10.43)1140重量部とカプリル酸420重量部とを、加熱ジャケット及び撹拌機を備えた反応器に仕込んだ。これに25重量%水酸化ナトリウム水溶液0.780重量部を添加した後、窒素気流下で撹拌しながら、220℃に昇温して5時間反応させた。次いで、240℃に昇温して更に3時間反応させ、デカグリセリンカプリル酸エステル組成物(酸価0.5mgKOH/g)1500重量部を得た。得られたデカグリセリンカプリル酸エステル組成物のエステル比率は、モノ:23%、ジ:24%、トリ:22%、その他31%であった。
ジグリセリンパルミチン酸モノエステルとしては理研ビタミン株式会社の商品「ポエムDP−95RF」を使用した。
トリグリセリンパルミチン酸モノエステルとしては理研ビタミン株式会社の商品「ポエムTRP−97RF」を使用した。
ショ糖パルミチン酸エステルとしては三菱化学フーズ株式会社の商品「リョートーシュガーエステルP−1670」を使用した。
<培地での静菌試験>
表1および2に示す、実施例1〜5および比較例1〜3の食品用静菌剤、供試菌を使用し、嫌気性菌用培地変法TGC(日水製薬社製)に食品用静菌剤を加え、供試菌(104個/g)を表2中に記載の温度で嫌気培養し、微生物の発育を観察し、有効静菌濃度結果を表3に示した。
表1に示す実施例1〜5及び比較例4〜6の食品用静菌剤と表2に示す供試菌1とを使用し、コーンスターチ系での静菌試験を行った。すなわち、コーンスターチ1.5%を含有する嫌気性菌用培地変法TGC(日水製薬社製)に食品用静菌剤を加え、供試菌(104個/g)を表2中に記載の温度で培養し、微生物の発育を観察し、有効静菌濃度結果を表4に示した。
Claims (7)
- 重合度2〜5のポリグリセリンとC6〜C12の脂肪酸のエステルとから成り、ポリグリセリン脂肪酸エステルに対するポリグリセリン脂肪酸ジエステルの含量が30重量%以上である、ポリグリセリン脂肪酸ジエステルを有効成分とする食品用静菌剤。
- 重合度6〜15のポリグリセリンとC6〜C12の脂肪酸のエステルとから成り、ポリグリセリン脂肪酸エステルに対するポリグリセリン脂肪酸ジエステルの含量が20重量%以上である、ポリグリセリン脂肪酸ジエステルを有効成分とする食品用静菌剤。
- 食品用静菌剤が澱粉含有食品用静菌剤である請求項1又は2に記載の食品用静菌剤。
- 澱粉を0.01〜95重量%含有する食品用である請求項3に記載の食品用静菌剤。
- 請求項1〜4の何れかに記載の食品用静菌剤を含有することを特徴とする食品。
- 食品用静菌剤の含有量が0.0001〜1重量%である請求項5に記載の食品。
- 食品が澱粉含有食品である請求項5又は6に記載の食品。
