1)本実施例は、例えば、スナック及びトルティーヤの製造において使用される。本方法から形成されたプレゼラチン化されたマサ及び部分全粒フラワーは、工業的なコーンスナック及び商用トルティーヤが焼成食品の調理で使用される高生産性のマサ生地(最終的な水分が50%から55%)に対して重量比1:1.0から約1:1.4の温水で再水和される。トランスフェルラ酸は、優れた食物繊維抗酸化物質であり、湿式処理、特にアルカリ状態の下で、調理又はベークする間に作用させられる。マサフラワーは、平均約9%の食物繊維及び800ppmのトランスフェルラ成分を含有しており(又は1280μmolのトロロクス等価物/100gとして表される: Decker et al. 2002)、生フラワーに比べて50%低かった(ニシュタマリゼーションされたコーンフラワーMaseca(登録商標)ブランドは、平均8%の食物繊維を含んでいる。:米国特許第6,764,699号)。このプレゼラチン化された部分全粒フラワーは、乾燥製粉されたコーンフラワー(209ppm)やブランが同様の除去されたフラワーに比べて高いフェルラ酸を含んでいる(小麦/オート麦:59/55ppm:Sosulski et al. 1982 及びRosazza et al. 1995)。フェルラ酸はフェノール性の抗酸化物として知られており、遊離基の効果的なスカベンジャー(scavenger)である(μmolトロロクス等価物としての脂溶性及び親水性作用)。フェルラ成分は、酸化ダメージから低密度のリポタンパク質を保護し、抗炎症特性を示し、化学的に発癌や過酸化脂質を抑制することが報告されている。
2)本実施例は、例えば、シリアルベース成分として全粒食品において使用される。前記工程から得られたインスタント及びホールフラワーは、食物繊維を約70%から約80%、フェルラ抗酸化物質の含有量を800%から約1400%に増加させるために、穀物フラワーの重量に対して45%から49%で均一に混ぜられることができる。全粒フラワーは、工業用小麦ベース及び穀物ベース食品の調理において使用される生産量の少ないコーン生地のために、重量比が1:0.7から約1:1.1の温水によって再加水される。
Claims (17)
- 精製コーン粒を提供する提供工程と、
散水で精製コーン粒を予備調整して、湿らせた全粒コーン粒を製造する予備調整工程と、
そこからほぐれたブラン部を擦りむくことによって前記湿らされた全粒コーン粒を粉砕し、前記湿らされた全粒コーン粒を微細及び粗大粉末粒分に製粉する粉砕製粉工程と、
前記微細及び粗大粉末粒分をふるい分け及び吸引するふるい分け及び吸引工程と、
前記ふるい分け及び吸引された微細粉末粒分を石灰と混合して、石灰処理された微細粉末を製造する混合工程と、
飽和蒸気の流れを注入することによって、前記石灰処理された微細粉末を湿熱予備調理する湿熱予備調理工程と、
前記湿熱予備調理された微細粉末を放出する放出工程と、
前記予備調理され石灰処理された微細粉末を温度調整して、胚乳を部分的に水和させ、澱粉及びタンパク質顆粒を膨らませることにより、温度調整されたコーン粒子を製造する温度調整工程と、
前記温度調整されたコーン粒子を熱風乾燥して、乾燥されたコーン粒子を製造する熱風乾燥工程と、
湿った空気を放出しつつ、前記乾燥されたコーン粒子をきれいな外気で冷却及び更に乾燥する冷却乾燥工程と、
前記冷却及び乾燥されたコーン粒子を微細及び粗大粒分に製粉する製粉工程と、
前記微細粒分から、フラワーを収集する収集工程と、
を含むことを特徴とするフラワーを製造する方法。 - 前記ふるい分け及び吸引工程は、軽量ブラン粒分を除去する除去工程を含むことを特徴とする請求項1に記載の方法。
- 前記湿熱予備調理工程における飽和蒸気は、150℃から170℃の範囲の温度であることを特徴とする請求項1に記載の方法。
- 前記湿熱予備調理工程は、部分的な澱粉のゼラチン化及びタンパク質変性をもたらすことを特徴とする請求項3に記載の方法。
- 前記熱風乾燥工程は、更なるプレゼラチン化をもたらすことを特徴とする請求項1に記載の方法。
- 前記冷却及び乾燥されたコーン粒子の製粉工程は、更に粗大粉末粒分を再製粉する再製粉工程を含むことを特徴とする請求項1に記載の方法。
- 前記全粒コーン粒が前記微細及び粗大粉末粒分に粉砕及び製粉された後に、
前記微細及び粗大粉末粒分を吸引して、ライトコーンブラン粒分を隔離する吸引工程と、
前記吸引された粗大粉末粒分をリサイクルするリサイクル工程と、
前記リサイクルされた粗大粉末粒分を、微細粉末粒分に再製粉する再製粉工程と、
を更に含むことを特徴とする請求項1に記載の方法。 - 前記フラワーは、穀物ベース食品に適した40から120メッシュ以下の全粒コーンフラワーを含むことを特徴とする請求項1に記載の方法。
- プリクッカーにおける前記湿熱予備調理工程は、前記石灰処理された微細粉末が前記プリクッカーに入れられると、飽和蒸気を前記石灰処理された微細粉末の流れに加圧下で注入し、1から5秒間で20%から22%の水分含有量に前記石灰処理された微細粉末を瞬時に加熱及び加水する加熱加水工程を含むことを特徴とする請求項1に記載の方法。
- 前記フラワーは、トルティーヤ及びコーンベース食品に適した20から100メッシュ以下のプレゼラチン化されたマサフラワーを含むことを特徴とする請求項1に記載の方法。
- 前記マサフラワーは、前記精製コーン粒の総重量の90%の生産量に相当することを特徴とする請求項10に記載の方法。
- 前記全粒コーンフラワーは、前記精製コーン粒の総重量の98%の生産量に相当することを特徴とする請求項8に記載の方法。
- 前記ふるい分け及び吸引された微細粉末粒分は、前記精製コーン粒の0.20wt%の石灰と混合されることを特徴とする請求項10に記載の方法。
- 前記ふるい分け及び吸引された微細粉末粒分は、前記精製コーン粒の0.02wt%の石灰と混合されることを特徴とする請求項8に記載の方法。
- 前記熱風乾燥工程は、前記温度調整されたコーン粒子の水分含有量が9%から15%になるように水分を除去しながら、2から6秒の時間の間に190℃から260℃の温度で行われることを特徴とする請求項1に記載の方法。
- 前記ふるい分け及び吸引工程は、前記粗大粉末粒分から前記微細粉末粒分を分離し、
前記微細粉末粒分は、胚乳、胚芽及びタンパクブラン粒分を含み、
前記粗大粉末粒分は、胚乳、胚芽及び果皮ブラン粒分を含む
ことを特徴とする請求項1に記載の方法。 - 前記温度調整されたコーン粒子の水分含有量が9%から13%になるように水分を除去しながら、穀物ベース食品に適した40から120メッシュ以下のインスタント全粒コーンフラワーを収集する工程を含むことを特徴とする請求項15に記載の方法。
