Claims (2)
- 蒸したソバ実に、リゾプス・ミクロスポラスNBRC31988又はリゾプス・オリゼATCC48007を添加し、ソバ実を発酵させて大豆加工品であるテンペ様に凝集させ、固形、半固形、または半流動状のソバ食品を得ることを特徴とする発酵ソバ食品。
- ソバ実に、リゾプス・ミクロスポラスNBRC31988又はリゾプス・オリゼATCC48007を添加することにより、ソバ実を発酵させ大豆加工品であるテンペ様に凝集し、固形、半固形または半流動状の形態にすることを特徴とする発酵ソバ食品の製造法。
