Description
のがよい。タピオカ澱粉は市販のものを使用すればよい。また、タピオカ澱粉は加工澱粉を使用してもよい。加工澱粉としては、例えば、α化澱粉、エステル化澱粉、エーテル化澱粉、リン酸架橋澱粉などが挙げられる。タピオカ澱粉の含有量としては、例えば、粉粒物中に15〜50質量%、より好ましくは18〜40質量%であるのがよい。
Claims (3)
- 熱湯を注ぐことにより煮込まずにクリームシチュー、ビーフシチュー、ホワイトソース、デミグラスソース、カレーソース、パスタソースのうちのいずれかのソースを作るための即席食品であって、
小麦粉と、馬鈴薯澱粉及び澱粉分解物の混合乾燥物と、調味料とを含有する粉粒物を含み、
前記粉粒物中の小麦粉と馬鈴薯澱粉との比率が質量比で1.0:0.5〜1.0:1.5であり、
前記混合乾燥物中の馬鈴薯澱粉と澱粉分解物との比率が質量比で1.0:0.1〜1.0:1.5であり、
前記澱粉分解物がデキストリン、マルトデキストリン、還元デキストリン、還元マルトデキストリンのうちのいずれかであることを特徴とする即席食品。 - 前記粉粒物が顆粒状食品である、請求項1に記載の即席食品。
- 前記即席食品が、前記粉粒物と共に固形食品を含むものである、請求項1又は2に記載の即席食品。
