Description
水槽中の甘海老を掬いあげて余分の水を落とし、処理槽に入れておいた約 4〜15℃のそれぞれの保存処理液に、1分間浸漬した後掬い上げ、直ちにプラスチック袋に入れて脱気密封し−18℃の冷凍庫に入れて急速冷凍し、そのまま保存した。
上記の冷凍庫中で少なくとも16時間以上保存された甘海老10尾を、15〜20℃の流水(水道水)で解凍し、20℃に達した甘海老を角型バットに敷き詰めたキッチンペーパー上に並べて、21〜24℃の室内で白色蛍光灯による間接照明下に、約10時間の経時劣化の促進試験を行い、殻つき状態に於ける黒変や白点の発生及び色目の低下を観察した。その後続いて海老肉の食味を舌で味わい、同時に異味や異臭の発生の有無を調べた。なお、これらの各検査項目については、5人の評価者がそれぞれ後記の評価基準に基づいて独立に評価し、採点した数値を平均したのち4捨5入して丸めた値として、表1の保存成績の欄にそれぞれ表示すると共に、それらの合計得点も表示した。
4点:活海老と同等かそれに劣らない状態を維持している
3点:活海老冷凍品の解凍直後と略同等である
2点:通常冷凍品解凍後の目立つ欠点がない状態と同等
1点:明らかな欠点がある
0点:食品として不適である
Claims (4)
- アスコルビン酸、エリソルビン酸、及びそれらの塩並びにエステルより選ばれた少なくとも1種のアスコルビン酸化合物からなる第1成分と、該第1成分の含有量に対して0.05〜0.5倍量の、リンゴ酸、コハク酸、クエン酸、及び酒石酸、並びにこれらの塩より選ばれた少なくとも1種の有機多塩基酸化合物からなる第2成分とを含み、該第2成分の含有量が該第1成分の含有量に対して0.5倍量未満であることを特徴とする、甲殻類用保存剤(フェルラ酸を含む場合を除く)。
- アスコルビン酸、エリソルビン酸、及びそれらの塩並びにエステルより選ばれた少なくとも1種のアスコルビン酸化合物からなる第1成分と、該第1成分の含有量に対して0.05〜0.5倍量の、リンゴ酸、コハク酸、クエン酸、及び酒石酸、並びにこれらの塩より選ばれた少なくとも1種の有機多塩基酸化合物からなる第2成分と、該第1成分の含有量に対して0.1〜1倍量の還元性糖化合物を含み、該第2成分の含有量が該第1成分の含有量に対して0.5倍量未満であることを特徴とする、甲殻類用保存剤(フェルラ酸を含む場合を除く)。

- アスコルビン酸、エリソルビン酸、及びそれらの塩並びにエステルより選ばれた少なくとも1種のアスコルビン酸化合物からなる第1成分と、該第1成分の含有量に対して0.05〜0.5倍量の、リンゴ酸、コハク酸、クエン酸、及び酒石酸、並びにこれらの塩より選ばれた少なくとも1種の有機多塩基酸化合物からなる第2成分とを含み、該第2成分の含有濃度が該第1成分の含有濃度に対して0.5倍未満である水溶液からなる甲殻類用保存処理液(フェルラ酸を含む場合を除く)に、活状態、仮死状態で生活反応を失っていない生状態、又は冷凍状態にあって解凍後に生活反応を回復しえる状態を維持している甲殻類を、所要の時間接触させて処理したのち、冷蔵又は冷凍して保存することを特徴とする甲殻類の保存方法。
