Abstract
【解決手段】食肉のドリップ抑制剤は、ソルビット、トレハロースまたはそれらと他の糖質および/または調味料との組み合わせと、生の塊状食肉のpHをアルカリ側に調整可能なpH調整剤とを含んでいる。食肉のドリップ抑制剤は、有機酸類および/または食塩をさらに含んでいてもよい。食肉のドリップ抑制剤を、生の塊状食肉、特に生の節足動物または甲殻動物に含有させる。

Claims (8)
- ソルビット、トレハロースまたはそれらと他の糖質および/または調味料との組み合わせと、生の塊状食肉のpHをアルカリ側に調整可能なpH調整剤とを含むことを特徴とする食肉のドリップ抑制剤。
- 食塩をさらに含むことを特徴とする請求項1記載の食肉のドリップ抑制剤。
- 請求項1または2記載の食肉のドリップ抑制剤を生の塊状食肉に含有させて成ることを特徴とするドリップ抑制食肉。
- 請求項1または2記載の食肉のドリップ抑制剤を生の節足動物または甲殻動物に含有させて成ることを特徴とする請求項3記載のドリップ抑制食肉。
- 請求項1または2記載の食肉のドリップ抑制剤を含む水溶液に魚介類を浸漬することを特徴とする魚介類の加工方法。
- 前記水溶液がトレハロース、炭酸ナトリウムおよび食塩を含むことを特徴とする請求項5記載の魚介類の加工方法。
- 前記水溶液がpH7.5を越え9.5未満の水溶液であることを特徴とする請求項5記載の魚介類の加工方法。
- 前記魚介類が、マグロ、サバ、マダイ、ブリ、タラ、イカ、タコ、エビ、カニ、ウニ、ナマコ、ホタテ、カキ、タラコ、かずのこ、いくら、すじこ、白子またはフカヒレであることを特徴とする請求項5、6または7記載の魚介類の加工方法。
