Description
a)新鮮な根を脱水して乾燥小片(cossettes)を得る工程、
b)前記乾燥小片を焙煎する工程、
c)前記焙煎された乾燥小片を冷却し、粉砕する工程、
d)前記焙煎され粉砕された乾燥小片に熱水を通過させることによってチコリ抽出物を抽出する工程、そして
e)前記チコリ抽出物を微細化する工程。
Claims (3)
- 対乾燥物質重量比で50%から60%の高いイヌリンおよびフラクトオリゴサッカライド(FOS)含有率を特徴とする粉体状可溶性焙煎天然チコリ抽出物であって、
フルクトースとグルコースとの合計含有率が、対乾燥物質重量比で7%から9%である粉体状可溶性焙煎天然チコリ抽出物。 - 前記チコリ抽出物の1%溶液の500nmにおける吸収率によって測定された色指数が0.4から0.7の範囲を有する請求項1による粉体状可溶性焙煎天然チコリ抽出物。
- a)新鮮な根を脱水して乾燥小片を得る工程と、
b)前記乾燥小片を焙煎する工程と、
c)焙煎された前記乾燥小片を冷却し、粉砕する工程と、
d)焙煎され粉砕された前記乾燥小片に熱水を通過させることによってチコリ抽出物を抽出する工程と、
e)前記チコリ抽出物を微細化する工程とを有し、高いイヌリンおよびフラクトオリゴサッカライド(FOS)含有率を有する粉体状可溶性焙煎天然チコリ抽出物を製造する方法であって、
前記焙煎が焙煎器中にて130℃の温度で、かつ、低湿度で実施され、
前記焙煎の工程中において水の供給が不要であり、前記焙煎の操作中に発生する水蒸気を自由に除去することを特徴とする粉体状可溶性焙煎天然チコリ抽出物の製造方法。
