本発明は、サツマイモ蜜粉に関するものであり、特に詳しくはサツマイモ由来のイモ蜜(以下、単にイモ蜜とも称する)又は該イモ蜜を遠心分離し得られたイモ蜜の上清(以下、単に上清と記載することがある)の粉末又は顆粒からなるイモ蜜粉に関するものである
これまでイモ蜜は、南薩摩半島の頴娃・知覧地域等においてよもぎ餅に付ける蜜として限定的に季節の嗜好品として製造され、「どろあめ」という名称で当該地区において主に流通されている。
イモ蜜は、抗酸化機能や血糖上昇抑制、整腸作用など栄養学的な機能性を有するとされ、砂糖に代わる新規な甘味料としての検討が進められている。
当該イモ蜜は、これまで本願発明者らによって、サツマイモ由来の糖化酵素を用いた製造方法が提案され、糖化酵素として従来使用されてきた麦芽などの雑味や麦芽臭がなく、色、風味、匂い等の官能特性に優れ、保存期間が長く設定できる機能性を向上させたイモ蜜の提案がなされており(特許文献1:特許第5981885号)、イモ蜜自体やイモ蜜スプレッドなどとして製品上市されている。
イモ蜜は、抗酸化機能や血糖上昇抑制、整腸作用など栄養学的な機能性を有するとされ、砂糖に代わる新規な甘味料としての検討が進められている。
当該イモ蜜は、これまで本願発明者らによって、サツマイモ由来の糖化酵素を用いた製造方法が提案され、糖化酵素として従来使用されてきた麦芽などの雑味や麦芽臭がなく、色、風味、匂い等の官能特性に優れ、保存期間が長く設定できる機能性を向上させたイモ蜜の提案がなされており(特許文献1:特許第5981885号)、イモ蜜自体やイモ蜜スプレッドなどとして製品上市されている。
イモ蜜は前述の通り、栄養学的機能性を有する新規な甘味料といえ、種々の加工食品や健康食品等への展開が期待されているものの、イモ蜜それ自体は粘度の高い液状の性状を有し、加工食品等に配合する場合、取り扱い性に難点を有する。
本発明は、粘性が高く取り扱いにくいサツマイモ由来のイモ蜜又はイモ蜜の上清において、その栄養機能や味覚性を維持した、新規な形態としての天然由来のイモ蜜の粉末形態及び/又は顆粒形態物を提供することを目的とする。

本発明によれば、サツマイモ由来のイモ蜜が有する栄養学的な機能性を損なうことなく、イモ蜜、その上清、又はこれら双方の粉末又は顆粒からなるイモ蜜粉を提供することができる。
また本発明によれば、イモ蜜粉が粉末又は顆粒形態にあるため、粘度の高い液状のイモ蜜と比べ、汎用性、保存性、携帯性に優れた製品を提供することができる。
さらに本発明のイモ蜜粉は粉末又は顆粒形態を有しているため、従来の粉末又は顆粒形態の砂糖などの甘味料と同様に、他の食品や飲料等の材料との混合が容易であり、且つ均一な混合を可能とする。加えて、従来の砂糖などに比べて、イモ蜜が有する栄養学的成分、例えば食物繊維やカリウム等を豊富に含む、これまでにない粉末形態の甘味料としてのイモ蜜粉を提供することができる。
また本発明によれば、イモ蜜粉が粉末又は顆粒形態にあるため、粘度の高い液状のイモ蜜と比べ、汎用性、保存性、携帯性に優れた製品を提供することができる。
さらに本発明のイモ蜜粉は粉末又は顆粒形態を有しているため、従来の粉末又は顆粒形態の砂糖などの甘味料と同様に、他の食品や飲料等の材料との混合が容易であり、且つ均一な混合を可能とする。加えて、従来の砂糖などに比べて、イモ蜜が有する栄養学的成分、例えば食物繊維やカリウム等を豊富に含む、これまでにない粉末形態の甘味料としてのイモ蜜粉を提供することができる。
近年、WHO(世界保健機関)は糖類摂取量に関する新しい指針案を発表し、それによると、肥満及び糖尿病、う蝕等の問題を解消するために砂糖類の摂取量を一日のエネルギー摂取量の5%未満に制限することを薦めている。この指針案に従うと、普通体型の大人が一日に摂取できる砂糖量は約25gで、わずかにティースプーン約6杯分の砂糖で摂取制限となる。また、WHOでは、2016年から糖尿病などの生活習慣病や肥満の一因とされる砂糖を多く含む飲料などに課税する砂糖税の導入を世界各国に勧めており、イギリスやアメリカ合衆国の一部、さらにはフィリピンなどの東南アジア諸国でも導入が進められている。
こうした世界的傾向がある中、砂糖類に代わる新規甘味料が求められており、例えば甘味が砂糖の数百倍もあるアスパルテームを始めとする合成甘味料が提案され、それらを使用した加工食品が市場に提供されてきた。
わが国においても、各産業分野において、砂糖類やその代用としての合成甘味料に代わる新たな甘味料への要求があり、サツマイモ由来のイモ蜜はその栄養学的機能性からも次世代の甘味料として注目されている。
こうした世界的傾向がある中、砂糖類に代わる新規甘味料が求められており、例えば甘味が砂糖の数百倍もあるアスパルテームを始めとする合成甘味料が提案され、それらを使用した加工食品が市場に提供されてきた。
わが国においても、各産業分野において、砂糖類やその代用としての合成甘味料に代わる新たな甘味料への要求があり、サツマイモ由来のイモ蜜はその栄養学的機能性からも次世代の甘味料として注目されている。
これまで、イモ蜜のより具体的な商品化の形態としては、例えば、蜜状等の食品などが考えられてきたが、様々な製品への応用において粘度の高い液状の性状であるイモ蜜は扱いが難しい。
例えば、チョコレート製造など、水分含有率のコントロールが風味の決め手となる製品において、高い粘性と高い水分含有率を有するイモ蜜はそのままでは使用に不向きである。同様に、焼き菓子やパン製造においても、各製品の粉末原料との配合性、加工性、味覚性の観点から、イモ蜜のままでは使用に不向きであり、より簡便で扱い易い粉末の形態での提供が望まれていた。
また一般の消費者においても、砂糖や人工甘味料に代わる天然の甘味料として、そして料理用の調味料や飲料用のスイートナーとして、イモ蜜は有望視されているものの、広く普及するには、砂糖と同様の操作性や保存性、携帯性を有することが望まれる。
本発明は、とりわけ、製菓・製パン・飲料業界や、健康食品業界等からの要望、さらには一般消費者からの要望を踏まえ、イモ蜜の栄養機能、味覚をそのままに、より操作性、配合性、加工性に優れたイモ蜜粉を提供することを課題とし、成されたものである。
以下、本発明について詳細に説明する。
例えば、チョコレート製造など、水分含有率のコントロールが風味の決め手となる製品において、高い粘性と高い水分含有率を有するイモ蜜はそのままでは使用に不向きである。同様に、焼き菓子やパン製造においても、各製品の粉末原料との配合性、加工性、味覚性の観点から、イモ蜜のままでは使用に不向きであり、より簡便で扱い易い粉末の形態での提供が望まれていた。
また一般の消費者においても、砂糖や人工甘味料に代わる天然の甘味料として、そして料理用の調味料や飲料用のスイートナーとして、イモ蜜は有望視されているものの、広く普及するには、砂糖と同様の操作性や保存性、携帯性を有することが望まれる。
本発明は、とりわけ、製菓・製パン・飲料業界や、健康食品業界等からの要望、さらには一般消費者からの要望を踏まえ、イモ蜜の栄養機能、味覚をそのままに、より操作性、配合性、加工性に優れたイモ蜜粉を提供することを課題とし、成されたものである。
以下、本発明について詳細に説明する。
本発明は、サツマイモ由来のイモ蜜、その上清、又はこれら双方の粉末又は顆粒からなるイモ蜜粉を対象とする。前記粉末又は顆粒は、麦芽や、ビタミン及びミネラルその他の添加剤をさらに含んでいてもよい。
本書において、イモ蜜粉とは、主としてサツマイモ由来のイモ蜜や、該イモ蜜の上清、またはその双方の粉末形態または顆粒形態を指す。後述するように、該イモ蜜粉には、原料としてサツマイモ以外のイモを含んでいてもよいが、単にサツマイモやその他イモ原料を粉末化(顆粒化)しただけのものは除外される。
本書において、イモ蜜粉とは、主としてサツマイモ由来のイモ蜜や、該イモ蜜の上清、またはその双方の粉末形態または顆粒形態を指す。後述するように、該イモ蜜粉には、原料としてサツマイモ以外のイモを含んでいてもよいが、単にサツマイモやその他イモ原料を粉末化(顆粒化)しただけのものは除外される。
本発明に係る前記イモ蜜粉は、例えば平均粒子径を10μm~500μmとすることができ、また例えば10μm~300μm、30μm~200μm、あるいはまた40μm~100μm、50μm~100μmとすることができる。
本発明に係る前記イモ蜜粉は、例えば水分含有量が0.1~1.0%(w/w)の範囲に乾燥されてなるものとすることができる。前記水分含有量は、例えば0.1%以上、0.2%以上、0.3%以上、0.4%以上、0.5%以上、0.6%以上、0.7%以上、0.8%以上、0.9%以上(すべて(w/w))とすることができる。また水分含有量は、例えば1.0%以下、0.9%以下、0.8%以下、0.7%以下、0.6%以下、0.5%以下、0.5%以下、0.3%以下、0.2%以下(すべて(w/w))とすることができる。
本発明に係る前記イモ蜜粉(100g当たり)における成分の一例を下記表1に示す。
表1中の成分において、例えば食物繊維は、好ましくは100g当たり8~12g(イモ蜜粉全体の8~12質量%)、またカリウムは、好ましくは同1,000~1,400mg(同1.0~1.4質量%)とすることができる。
本発明に係るイモ蜜粉は、炭水化物含量が90%~97%と天然甘味料としての特長を有する。従って本発明は、イモ蜜粉からなる甘味料も対象とする。
本発明のイモ蜜粉の原料、すなわち、イモ蜜又はその上清の原料として、サツマイモが-使用され、その産地や品種については特に限定されない。サツマイモ品種の一例として、アンノウ、コガネセンガン、エイムラサキや、また、高系14号、シロユタカ、ベニハルカ、ムラサキマサリ、アヤコマチ、スイオウ、ジェイレッド、ボールガード等、従来公知の国内外品種を使用することが可能である。
前記イモ蜜粉の原料として使用されるサツマイモは、主として当該サツマイモの本体部分、すなわち塊根部が好ましく使用され、塊根部の形状、大きさ、色、品種等は特に限定されず、商業的価値の低いB品芋(クズ品)を使用することが可能である。
また前記塊根部以外にも、当該サツマイモの茎部或いは葉柄部や葉部の何れかの部分を、単独或いはそれらを混在させた状態で該塊根部に混合させて使用することも可能である。
またイモ蜜粉の製造にあたり、収穫したサツマイモをそのまま原料として使用できるが、収穫後に加熱処理をして冷凍保存したものや、熱風乾燥や減圧加熱乾燥等、従来公知の方法でサツマイモを乾燥粉末化したものを原料として使用することもできる。
前記イモ蜜粉の原料として使用されるサツマイモは、主として当該サツマイモの本体部分、すなわち塊根部が好ましく使用され、塊根部の形状、大きさ、色、品種等は特に限定されず、商業的価値の低いB品芋(クズ品)を使用することが可能である。
また前記塊根部以外にも、当該サツマイモの茎部或いは葉柄部や葉部の何れかの部分を、単独或いはそれらを混在させた状態で該塊根部に混合させて使用することも可能である。
またイモ蜜粉の製造にあたり、収穫したサツマイモをそのまま原料として使用できるが、収穫後に加熱処理をして冷凍保存したものや、熱風乾燥や減圧加熱乾燥等、従来公知の方法でサツマイモを乾燥粉末化したものを原料として使用することもできる。
また、前記サツマイモに加え、ヤーコン、カイアポ芋等機能性成分を含有するその他の塊根類(イモ)もイモ蜜粉の原料として併用することができる。ヤーコン等のその他の塊根類はそのまま、あるいはその乾燥粉末物を、イモ蜜粉の原料としてサツマイモ原料と併用することができる。なお、その他塊根類の乾燥粉末物を、イモ蜜粉と混合し、用いることもできる。
前記イモ蜜粉のもととなるイモ蜜は、サツマイモを適宜の方法で加工・精製処理して得られる。前記イモ蜜を製造する為の加工処理方法は特定されず、加熱処理、加圧処理、乾燥処理、蒸し処理、煮込み処理、細断処理、圧搾処理、糖化処理、混練り処理、搾取処理、擦過処理、濃縮処理等の公知の手段を利用して製造加工され使用される。
一般に、イモ蜜製造にあたり糖化処理が必須として行われるが、この際に使用する糖化酵素として、サツマイモ由来の糖化酵素や、麦(麦芽)や大豆由来等の(サツマイモ由来以外の)糖化酵素を使用することができる。
なお、前記イモ蜜の製造或いは精製の条件の一例として、本願出願人が所有する特許第5981885号に開示された方法を採用することができ、特許第5981885号の全開示は本願の参酌として援用される。上記特許に開示された方法では、サツマイモからイモ蜜を製造するに際して、糖化酵素としてサツマイモ由来の成分を糖化酵素として使用する点を特徴とする。サツマイモ由来の成分を糖化酵素として使用することにより高品質のイモ蜜の製造が可能になる。
一般に、イモ蜜製造にあたり糖化処理が必須として行われるが、この際に使用する糖化酵素として、サツマイモ由来の糖化酵素や、麦(麦芽)や大豆由来等の(サツマイモ由来以外の)糖化酵素を使用することができる。
なお、前記イモ蜜の製造或いは精製の条件の一例として、本願出願人が所有する特許第5981885号に開示された方法を採用することができ、特許第5981885号の全開示は本願の参酌として援用される。上記特許に開示された方法では、サツマイモからイモ蜜を製造するに際して、糖化酵素としてサツマイモ由来の成分を糖化酵素として使用する点を特徴とする。サツマイモ由来の成分を糖化酵素として使用することにより高品質のイモ蜜の製造が可能になる。
前記イモ蜜の上清とは、イモ蜜を遠心分離して得られる上清であり、前記品種及び製法により製造されたイモ蜜の上清であれば、その種類は特定されるものではない。
イモ蜜の上清の抽出方法としては、例えば、イモ蜜質量の2倍量の上清の抽出条件下において、イモ蜜質量と同量水を加え、毎分15000回転で3~5分間程度遠心分離する方法が挙げられる。イモ蜜の2倍量~10倍量の水で抽出することも可能である。
イモ蜜の上清の抽出方法としては、例えば、イモ蜜質量の2倍量の上清の抽出条件下において、イモ蜜質量と同量水を加え、毎分15000回転で3~5分間程度遠心分離する方法が挙げられる。イモ蜜の2倍量~10倍量の水で抽出することも可能である。
本発明は、前記イモ蜜粉を含む各種製品も対象とする。

上記加工食品、健康食品、口腔ケア剤等の各種製品の製品形態は特に限定されず、製品そのものだけでなく、例えば、液状、蜜状、粉末状、顆粒状、丸剤状、錠剤状、ソフトカプセル状、ハードカプセル状、ゼリー状、ペースト状等種々の製品形態を採り得る。
前記イモ蜜粉及びイモ蜜粉を含有する各種製品(加工食品、健康食品、口腔ケア製剤等)は、ヒトを含む哺乳動物(例えばイヌ、ネコ等)を対象とすることができ、特にヒトが好ましい。
[イモ蜜粉の製造方法]
本発明に係るイモ蜜粉は、サツマイモ由来のイモ蜜及び/又はその上清から、乾燥微粒子化により、粉末又は顆粒に仕上げる過程を含む方法にて製造することができる。
本発明に係るイモ蜜粉は、サツマイモ由来のイモ蜜及び/又はその上清から、乾燥微粒子化により、粉末又は顆粒に仕上げる過程を含む方法にて製造することができる。
上記乾燥微粒子化は、従来公知の乾燥微粒子化の方法を適宜選択でき、例えば、凍結乾燥、真空乾燥、除湿乾燥、噴霧乾燥、ドラム乾燥、又はそれらの組合せによる方法により実施され得る。
これら方法の中でも、凍結乾燥法は、乾燥温度が低いため、物理的、化学的、酵素的変化が少ない乾燥法として従来種々の加工食品の製造に用いられている。凍結乾燥法は、(1)栄養価や風味の損失が少ない、(2)収縮や変形が少なく、乾燥前の原型をとどめた製品が得ることができる、(3)得られた製品が多孔質であるため復元性・溶解性が高い、(4)得られた製品の水分含量が低く、貯蔵性および輸送性に優れるといった利点を有し、本発明にあっても特に(1)や(4)の利点から、凍結乾燥法を好ましく選択することができる。本発明に係る製造方法に採用し得る凍結乾燥法は、従来公知の手法であれば特に制限はない。
一例として、例えばイモ蜜又は又はイモ蜜の上清を-20℃~-80℃で数時間凍結し、その後、当該凍結した試料を真空装置に掛けて-30℃~-80℃で24時間~72時間程度真空状態にし、その後、凍結乾燥装置内で水分のみを蒸発させ、その後、常温、大気圧に戻し、必要に応じて粉砕処理を為すことによって、乾燥した粉末状態或いは顆粒状態のイモ蜜粉を得ることが可能となる。
なお乾燥に係る温度や時間の表示はあくまでも一例であり、イモ蜜や上清に含まれる水分量や、乾燥する全体量、乾燥装置、また乾燥にかかるコスト等を考慮し、適宜変更することもできる。

より詳細には、凍結乾燥は、イモ蜜及び/又はその上清を冷凍処理し、その後真空凍結乾燥処理を行う。
前記冷凍処理において、イモ蜜及び/又はその上清の温度又は環境温度が-20℃以下、-30℃以下、-40℃以下、-50℃以下、-60℃以下、-70℃以下、又は-80℃以下になるように調節され得る。これは、液体窒素や冷却されたアルコール等の不凍液との接触や、フリーザー中での保存によって実行することができる。
前記冷凍処理の実行時間は、非常に短時間(例えば一秒)でもよいが、通常、イモ蜜及び/又はその上清が確実に冷凍されるように、上述温度において例えば1~48時間、あるいはまた4~24時間程度に亘って実行され得る。すなわち冷凍処理の開始時刻から後述する真空凍結乾燥処理の開始時刻のインターバルは0~48時間又は4~24時間でもよい。
前記冷凍処理において、イモ蜜及び/又はその上清の温度又は環境温度が-20℃以下、-30℃以下、-40℃以下、-50℃以下、-60℃以下、-70℃以下、又は-80℃以下になるように調節され得る。これは、液体窒素や冷却されたアルコール等の不凍液との接触や、フリーザー中での保存によって実行することができる。
前記冷凍処理の実行時間は、非常に短時間(例えば一秒)でもよいが、通常、イモ蜜及び/又はその上清が確実に冷凍されるように、上述温度において例えば1~48時間、あるいはまた4~24時間程度に亘って実行され得る。すなわち冷凍処理の開始時刻から後述する真空凍結乾燥処理の開始時刻のインターバルは0~48時間又は4~24時間でもよい。
真空凍結乾燥処理の温度条件は、特に制限はない。当該温度条件の上限値は、例えば-30℃以下、-35℃以下、-40℃以下、-45℃以下とすることができる。また下限値に特に制限はないが、例えば-80℃以上、-75℃以上、-70℃以上、-65℃以上、-55℃以上、-50℃以上とすることができる。
真空凍結乾燥処理の圧力条件にも特に制限はない。当該圧力条件の上限値は、例えば20Pa以下、18Pa以下、16Pa以下、15Pa以下とすることができる。また圧力条件の下限値は0Pa以上であり、1Pa以上、2Pa以上、3Pa以上、4Pa以上、5Pa以上とすることができる。
真空凍結乾燥処理を実行する時間は、特に制限はなく、液量に応じた時間を設定し得る。当該凍結乾燥処理時間の下限値は、例えば、1時間以上、2時間以上、3時間以上、4時間以上、5時間以上、6時間以上、7時間以上、8時間以上、10時間以上、12時間以上、24時間以上、36時間以上とすることができる。また上限値は、例えば72時間以下、48時間以下、36時間以下、24時間以下、20時間以下、15時間以下、10時間以下、8時間以下とすることができる。
真空凍結乾燥処理を終えると、ほぼ完全に乾燥した粒状又は粉末状のイモ蜜粉を得ることができる。
真空凍結乾燥処理の圧力条件にも特に制限はない。当該圧力条件の上限値は、例えば20Pa以下、18Pa以下、16Pa以下、15Pa以下とすることができる。また圧力条件の下限値は0Pa以上であり、1Pa以上、2Pa以上、3Pa以上、4Pa以上、5Pa以上とすることができる。
真空凍結乾燥処理を実行する時間は、特に制限はなく、液量に応じた時間を設定し得る。当該凍結乾燥処理時間の下限値は、例えば、1時間以上、2時間以上、3時間以上、4時間以上、5時間以上、6時間以上、7時間以上、8時間以上、10時間以上、12時間以上、24時間以上、36時間以上とすることができる。また上限値は、例えば72時間以下、48時間以下、36時間以下、24時間以下、20時間以下、15時間以下、10時間以下、8時間以下とすることができる。
真空凍結乾燥処理を終えると、ほぼ完全に乾燥した粒状又は粉末状のイモ蜜粉を得ることができる。
必要に応じて、乾燥後のイモ蜜及び/又はその上清を、各種ミルにより粉末化することができる。
また、粉末のイモ蜜粉を、必要に応じて顆粒化することができる。顆粒化は、押出造粒法、流動層造粒法、圧縮造粒法、破砕造粒法などの従来公知の造粒法を用いることができる。
また、粉末のイモ蜜粉を、必要に応じて顆粒化することができる。顆粒化は、押出造粒法、流動層造粒法、圧縮造粒法、破砕造粒法などの従来公知の造粒法を用いることができる。
本発明に係るサツマイモ由来のイモ蜜、その上清、又はこれら双方の粉末又は顆粒からなるイモ蜜粉は、サツマイモ由来の栄養成分、例えば食物繊維、カリウム、ポリフェノール等、砂糖にない栄養成分を含み、抗酸化機能や血糖上昇抑制、整腸作用など栄養学的な機能性を有する。そのため本発明に係るイモ蜜粉は、天然甘味料又は添加物として既存の食品に添加混合することにより、肥満や糖尿病への予防が高まる製品として期待できる。
また本願発明者等は、新規甘味料としてのサツマイモを主原料としたイモ蜜及びイモ蜜を遠心分離した上清において、抗う蝕・抗歯周病機能があることを発見している(PCT/JP2021/037493号、当該明細書の全開示は本願の参酌として援用される。)。
う蝕(虫歯)は全世界人口の7割、日本人の9割が患っている生活習慣病であり、日本人の歯の喪失原因の約8割をう蝕と歯周病が占めるとされている。さらに歯周病原性細菌を中心とする口腔細菌は、高齢者の誤嚥性肺炎の主要因として挙げられるなど、う蝕や歯周病に対して予防対策が行うことが必要とされている。
後述の実施例に示すように、本発明のイモ蜜粉においても、イモ蜜同様に抗う蝕予防効果、ならびに抗歯周病予防効果が確認され、イモ蜜粉を食品等に配合することにより、う蝕(虫歯)や歯周病を予防できる製品として期待できる。

このように本発明のイモ蜜粉は、天然のサツマイモを原料とし、人間の体にとっても極めて優しく、その使用方法、使用時間、使用回数、使用量などに関しても、砂糖のように実質的な制限はなく、広く安全且つ安心して何時でもどこでも任意に使用可能である。
またイモ蜜粉(イモ蜜)の糖組成は二糖類のマルトースであることから、肥満及び糖尿病予防が期待できるとともに、さらに抗う蝕原性及び歯周病原性細菌に対する抗菌性をそなえ、これらの発生予防も期待できる。
またイモ蜜粉は、従来の砂糖や人工甘味料のように、その製造過程において複雑な処理工程や複雑な処理条件の下で生成したり、抽出したりする工程や、それらを含めた他の成分を混合させる工程等を経ることがなく、生産コストも大幅に安価に設定する事が可能となる。
またイモ蜜粉(イモ蜜)の糖組成は二糖類のマルトースであることから、肥満及び糖尿病予防が期待できるとともに、さらに抗う蝕原性及び歯周病原性細菌に対する抗菌性をそなえ、これらの発生予防も期待できる。

以下に実施例を示し、本発明の詳細を具体的に説明するが、本発明はこれに限定されるものではない。
<製造例1> サツマイモ由来のイモ蜜の製造
本願出願人が所有する特許第5981885号公報に開示された方法に基づきサツマイモ由来のイモ蜜を製造した。
アンノウ(A)、コガネセンガン(B)、エイムラサキ(C)、ベニハルカ(D)の4品種のサツマイモを各々160Kg使用し、これを約1時間程蒸煮した後、75Lの水を加水してスラリー状の液状物を得た。
その後、当該液状物に、ベニハルカから得られたβ-アミラーゼ(糖化酵素)を添加し、65℃、30分間加熱処理した。得られた液状物を加圧して搾汁し、さらに2時間程加熱濃縮して、アンノウ、コガネセンガン、エイムラサキ及びベニハルカから、各々50Kg前後のイモ蜜[イモ蜜A-1:アンノウ、イモ蜜B-1:コガネセンガン、イモ蜜C-1:エイムラサキ、イモ蜜D-1:ベニハルカ]を得た。
本願出願人が所有する特許第5981885号公報に開示された方法に基づきサツマイモ由来のイモ蜜を製造した。
アンノウ(A)、コガネセンガン(B)、エイムラサキ(C)、ベニハルカ(D)の4品種のサツマイモを各々160Kg使用し、これを約1時間程蒸煮した後、75Lの水を加水してスラリー状の液状物を得た。

<製造例2> サツマイモ由来のイモ蜜の上清の製造
製造例1で得られたイモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)のそれぞれ3gを、等量の水で50%に希釈したものを、株式会社トミー精工製;MX-305遠心分離機を用いて、試験管で毎分15,000回転、5分間遠心分離した後、沈殿物を除去し、クリアな上清[上清A-1(アンノウ)、上清B-1(コガネセンガン)、上清C-1(エイムラサキ)、上清D-1(ベニハルカ)]を各々5g前後得た。
製造例1で得られたイモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)のそれぞれ3gを、等量の水で50%に希釈したものを、株式会社トミー精工製;MX-305遠心分離機を用いて、試験管で毎分15,000回転、5分間遠心分離した後、沈殿物を除去し、クリアな上清[上清A-1(アンノウ)、上清B-1(コガネセンガン)、上清C-1(エイムラサキ)、上清D-1(ベニハルカ)]を各々5g前後得た。
<製造例3> 麦芽入りイモ蜜の製造
アンノウ(A)、コガネセンガン(B)、エイムラサキ(C)、ベニハルカ(D)の4品種のサツマイモを各々160Kg使用し、これを約100℃の高温蒸気噴霧状態で1時間程蒸煮した後、75Lの水を加水してスラリー状の液状物を得た。
その後、当該液状物に、糖化酵素として麦芽(サントリーモルティング株式会社製;水飴用麦芽4/10粉砕)1.6Kgを添加し、60℃、30分間加熱処理した。得られた液状物を加圧して搾汁し、さらに2時間程加熱濃縮して、各々60Kg前後の糖化酵素として麦芽を用いたイモ蜜[イモ蜜A-2:アンノウ、イモ蜜B-2:コガネセンガン、イモ蜜C-2:エイムラサキ、イモ蜜D-2:ベニハルカ]を得た。
アンノウ(A)、コガネセンガン(B)、エイムラサキ(C)、ベニハルカ(D)の4品種のサツマイモを各々160Kg使用し、これを約100℃の高温蒸気噴霧状態で1時間程蒸煮した後、75Lの水を加水してスラリー状の液状物を得た。
その後、当該液状物に、糖化酵素として麦芽(サントリーモルティング株式会社製;水飴用麦芽4/10粉砕)1.6Kgを添加し、60℃、30分間加熱処理した。得られた液状物を加圧して搾汁し、さらに2時間程加熱濃縮して、各々60Kg前後の糖化酵素として麦芽を用いたイモ蜜[イモ蜜A-2:アンノウ、イモ蜜B-2:コガネセンガン、イモ蜜C-2:エイムラサキ、イモ蜜D-2:ベニハルカ]を得た。
<実施例1> イモ蜜粉の製造(1-1)
イモ蜜として、4種類のサツマイモから製造されたイモ蜜:イモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)を使用した。
イモ蜜A-1~イモ蜜D-1の夫々について、予備凍結温度を-80℃と-30℃の二種類を設定し、各温度で4~24時間凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24時間、試料中の水分のみを昇華させ試料の乾燥を行い、乾燥標品を電動ミルにて粉砕し、4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.3~0.5%(w/w)、粒径は50~100μmであった。
イモ蜜として、4種類のサツマイモから製造されたイモ蜜:イモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)を使用した。

図1に、イモ蜜D-1(ベニハルカ)の予備凍結前の外観写真(図1中、(1)及び(2))、並びに予備凍結(-80℃又は-30℃)及び凍結乾燥後(図1中、-80℃予備凍結(3)、-30℃予備凍結(4))の外観写真を示す。
また、予備凍結前、予備凍結・凍結乾燥後の質量並びに凍結前後の質量減少割合(%)を表2に示す。
図1にも示すように、イモ蜜自体(イモ蜜D-1(ベニハルカ))を凍結した標本で完全に凍結乾燥標品を得た。また表2に示すように、凍結乾燥後の質量割合は、乾燥前の約70%になった。これは二種類の予備凍結温度のいずれの場合も、ほぼ同じ結果になった。
また、予備凍結前、予備凍結・凍結乾燥後の質量並びに凍結前後の質量減少割合(%)を表2に示す。
<実施例2> イモ蜜粉の製造(1-2)
イモ蜜として、4種類のサツマイモから製造されたイモ蜜:イモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)を使用した。予備凍結温度を-80℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24時間、試料中の水分のみを昇華させ試料の乾燥を行った。
完成した凍結乾燥標品を、電動ミルにて回転数22,000rpmで1分間粉砕し、顆粒状の4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.3~0.5%(w/w)、粒径は80~200μmであった。
イモ蜜として、4種類のサツマイモから製造されたイモ蜜:イモ蜜A-1(アンノウ)、イモ蜜B-1(コガネセンガン)、イモ蜜C-1(エイムラサキ)、及びイモ蜜D-1(ベニハルカ)を使用した。予備凍結温度を-80℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24時間、試料中の水分のみを昇華させ試料の乾燥を行った。
完成した凍結乾燥標品を、電動ミルにて回転数22,000rpmで1分間粉砕し、顆粒状の4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.3~0.5%(w/w)、粒径は80~200μmであった。
図2に、イモ蜜D-1(ベニハルカ)(図2上段)及びイモ蜜A-1(アンノウ)(図2下段)の予備凍結前(図2中、(1)、(4))、凍結乾燥後(同(2)、(5))、粉砕後(粉末顆粒化後)(同、(3)、(6))の外観写真を示す。
また、予備凍結前、予備凍結・凍結乾燥後、粉砕後の顆粒の質量、並びに、凍結前後の質量減少割合(%)及び顆粒の回収割合(%)を表3に示す。
図2にも示すように、イモ蜜をそのまま凍結した標本で、完全に乾燥した粉末顆粒を得た。また表3にも示すように、凍結乾燥前後の質量減少割合は70%超、また、凍結乾燥標品から得られた顆粒の回収割合は67%~95%となった。
また、予備凍結前、予備凍結・凍結乾燥後、粉砕後の顆粒の質量、並びに、凍結前後の質量減少割合(%)及び顆粒の回収割合(%)を表3に示す。
<実施例3> イモ蜜粉の製造(2)
製造例2で得られたイモ蜜の上清[上清A-1(アンノウ)、上清B-1(コガネセンガン)、上清C-1(エイムラサキ)、上清D-1(ベニハルカ)]を使用し、予備凍結温度を-80℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24~72時間、試料中の水分のみを昇華させ試料の乾燥を行い、夫々の上清から4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.4~0.6%(w/w)、粒径は30~90μmであった。
製造例2で得られたイモ蜜の上清[上清A-1(アンノウ)、上清B-1(コガネセンガン)、上清C-1(エイムラサキ)、上清D-1(ベニハルカ)]を使用し、予備凍結温度を-80℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24~72時間、試料中の水分のみを昇華させ試料の乾燥を行い、夫々の上清から4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.4~0.6%(w/w)、粒径は30~90μmであった。
<実施例4> イモ蜜粉の製造(3)
製造例3で得られた麦芽入りイモ蜜[イモ蜜A-2:アンノウ、イモ蜜B-2:コガネセンガン、イモ蜜C-2:エイムラサキ、イモ蜜D-2:ベニハルカ]を使用し、予備凍結温度を-30℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24~72時間、試料中の水分のみを昇華させ試料の乾燥を行い、各麦芽入りイモ蜜より4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.2~0.6%(w/w)、粒径は30~100μmであった。
製造例3で得られた麦芽入りイモ蜜[イモ蜜A-2:アンノウ、イモ蜜B-2:コガネセンガン、イモ蜜C-2:エイムラサキ、イモ蜜D-2:ベニハルカ]を使用し、予備凍結温度を-30℃に設定し、4~24時間サンプルを凍結させた。次に、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24~72時間、試料中の水分のみを昇華させ試料の乾燥を行い、各麦芽入りイモ蜜より4種のイモ蜜粉を得た。
得られたイモ蜜粉の水分量は0.2~0.6%(w/w)、粒径は30~100μmであった。
<試験例1>イモ蜜粉の成分分析
製造例1(イモ蜜)、製造例2(イモ蜜の上清)、製造例3(麦芽入りイモ蜜)、実施例1(イモ蜜よりのイモ蜜粉)、実施例3(イモ蜜上清よりのイモ蜜粉)及び実施例4(麦芽入りイモ蜜よりのイモ蜜粉)で得られたイモ蜜、上清、並びにイモ蜜粉について、成分分析を実施した。なおこれらイモ蜜等の原料はアンノウ(A)である。
得られた結果を表4に示す。
表4に示すように、イモ蜜粉の原料(イモ蜜、上清、麦芽入りイモ蜜)によらず、ほぼ同様の組成を有するイモ蜜粉を得られた。
また、表4に示すように、水分量の低下によって見かけ上の含有量に変動はあるものの、原料のイモ蜜、上清、麦芽入りイモ蜜から大きく成分含有量を損なうことなく、イモ蜜粉を得ることができた。
製造例1(イモ蜜)、製造例2(イモ蜜の上清)、製造例3(麦芽入りイモ蜜)、実施例1(イモ蜜よりのイモ蜜粉)、実施例3(イモ蜜上清よりのイモ蜜粉)及び実施例4(麦芽入りイモ蜜よりのイモ蜜粉)で得られたイモ蜜、上清、並びにイモ蜜粉について、成分分析を実施した。なおこれらイモ蜜等の原料はアンノウ(A)である。
得られた結果を表4に示す。
また、表4に示すように、水分量の低下によって見かけ上の含有量に変動はあるものの、原料のイモ蜜、上清、麦芽入りイモ蜜から大きく成分含有量を損なうことなく、イモ蜜粉を得ることができた。
<試験例2>イモ蜜及びイモ蜜粉の食物繊維の分析
参考文献:Yoshimoto, M., Yamakawa, O.,and Tanoue, H., Potential chemopreventive properties and varietal difference of dietary fiber from sweetpotato (Ipomoea batatas L.) roots, Japan Agricultural Research Quarterly, 39(1): 37-43, 2005.に記載の手順に基づき、イモ蜜及びイモ蜜粉の食物繊維を分析した。
イモ蜜及びイモミツ粉試料に等量の蒸留水を加え、pH6.3に調整後、α-アミラーゼ溶液(20U)を添加し、95℃で30分間加熱して、澱粉を糖化した。溶液を60℃に冷却後、グルコアミラーぜ(58U)を加え、60℃で6時間加温して澱粉を糖化した。不溶性の繊維を遠心により除去した。上清を凍結乾燥し、粗食物繊維画分とした。清秤した試料を1.5gを0.25%シュウ酸アンモニウムの300mLで90℃、3時間加熱した。加温後、G3ガラスフィルター濾過し、ろ液を透析膜に移し、十分量の蒸留水で透析した。透析液を凍結乾燥して得られた粉末をペクチン画分として質量を測定した。G3ガラスフィルター濾過後、ガラスフィルターに残余した繊維も所定の操作に従って分画したが、ほとんど食物繊維成分は得られなかった。このことから、イモ蜜及びイモ蜜粉に含まれる食物繊維は、ほとんどペクチンであることが推察される結果となった。

イモ蜜及びイモミツ粉試料に等量の蒸留水を加え、pH6.3に調整後、α-アミラーゼ溶液(20U)を添加し、95℃で30分間加熱して、澱粉を糖化した。溶液を60℃に冷却後、グルコアミラーぜ(58U)を加え、60℃で6時間加温して澱粉を糖化した。不溶性の繊維を遠心により除去した。上清を凍結乾燥し、粗食物繊維画分とした。清秤した試料を1.5gを0.25%シュウ酸アンモニウムの300mLで90℃、3時間加熱した。加温後、G3ガラスフィルター濾過し、ろ液を透析膜に移し、十分量の蒸留水で透析した。透析液を凍結乾燥して得られた粉末をペクチン画分として質量を測定した。G3ガラスフィルター濾過後、ガラスフィルターに残余した繊維も所定の操作に従って分画したが、ほとんど食物繊維成分は得られなかった。このことから、イモ蜜及びイモ蜜粉に含まれる食物繊維は、ほとんどペクチンであることが推察される結果となった。
<参考試験例1>イモ蜜粉の抗歯周病予防効果
製造例1で得られたイモ蜜D-1(ベニハルカ)を用い、これを4時間、-80℃で予備凍結した後、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24時間乾燥を実施し、この乾燥標品を電動ミルにて粉砕し、イモ蜜粉を得た。なお乾燥標品の質量は元のイモ蜜質量の70%量であった。
得られたイモ蜜粉0.7gに対してTSB液体培地0.3mLを添加し、イモ蜜粉を溶解し培養用に調整した(このイモ蜜粉溶液は、元のイモ蜜と同じ濃度である。)。
製造例1で得られたイモ蜜D-1(ベニハルカ)を用い、これを4時間、-80℃で予備凍結した後、凍結乾燥機に凍結標品をセットし、-50℃、5Paの真空下で24時間乾燥を実施し、この乾燥標品を電動ミルにて粉砕し、イモ蜜粉を得た。なお乾燥標品の質量は元のイモ蜜質量の70%量であった。
得られたイモ蜜粉0.7gに対してTSB液体培地0.3mLを添加し、イモ蜜粉を溶解し培養用に調整した(このイモ蜜粉溶液は、元のイモ蜜と同じ濃度である。)。
TSB液体培地1mLに対して、歯周病原性細菌(Porphyromonas gingivalis,以下Pgと略称する)を80μL植菌して基礎サンプルを調製した。
この基礎サンプルに対し、前記イモ蜜粉溶液を培地中のイモ蜜粉の濃度が30%となるように添加した培地(サンプル(1))と、同イモ蜜粉の濃度が10%となるように添加した培地(サンプル(2))を準備した。またイモ蜜粉を添加せず、基礎サンプルのみ(無添加の通常培地による培養、サンプル(3))、並びに、TBS培地のみ(イモ蜜粉、Pgなし、サンプル(4))のサンプルも準備した。
サンプル(1)~(4)を37℃、2日間嫌気培養処理を行った後、各サンプルについて外観写真を撮影した。また、サンプル(1)~サンプル(3)について、生菌数を計測し、菌生存率を求めた。
得られた結果を図3及び図4に示す。
この基礎サンプルに対し、前記イモ蜜粉溶液を培地中のイモ蜜粉の濃度が30%となるように添加した培地(サンプル(1))と、同イモ蜜粉の濃度が10%となるように添加した培地(サンプル(2))を準備した。またイモ蜜粉を添加せず、基礎サンプルのみ(無添加の通常培地による培養、サンプル(3))、並びに、TBS培地のみ(イモ蜜粉、Pgなし、サンプル(4))のサンプルも準備した。
サンプル(1)~(4)を37℃、2日間嫌気培養処理を行った後、各サンプルについて外観写真を撮影した。また、サンプル(1)~サンプル(3)について、生菌数を計測し、菌生存率を求めた。
得られた結果を図3及び図4に示す。
図3に示すように、本発明に係るイモ蜜粉を添加したサンプル(1)及び(2)の培地は、TBS培地のみのサンプル(4)と同様に、培地の液体は透明(クリア)であり、いずれのサンプルに於いても当該歯周病原性細菌Pgの生育・増殖が抑制されたことを示す結果となった。一方、イモ蜜粉無添加の培地(サンプル(3))に於いては、菌の増殖による白濁状の濁りが存在し、当該歯周病原性細菌Pgの生育・増殖が確認された。
図4に示すように、歯周病原性細菌Pgの生存率は、、菌を添加した培地(サンプル(3))では100%であったが、イモ蜜粉30%添加のサンプル(1)及びイモ蜜粉10%添加のサンプル(2)では、それぞれ菌生存率が0%、3%であり、歯周病原性細菌Pgの生育・増殖が抑制されたことが確かめられた。
図4に示すように、歯周病原性細菌Pgの生存率は、、菌を添加した培地(サンプル(3))では100%であったが、イモ蜜粉30%添加のサンプル(1)及びイモ蜜粉10%添加のサンプル(2)では、それぞれ菌生存率が0%、3%であり、歯周病原性細菌Pgの生育・増殖が抑制されたことが確かめられた。
<参考試験例2>ポリフェノール含量の測定
参考文献:Md. Shahidul Islam, Makoto Yoshimoto, Shoji Yahara, Osamu Yamakawa, Shigenori Okuno, Koji Ishiguro, Osamu Yamakawa, Identification and characterization of foliar polyphenolic composition in sweetpotato (Ipomoea batatas L.) genotypes, Journal of Agricultural Food and Chemistry, 13(13):3718-3722, 2002.を参照し、フォーリン・チオカルト法によりより、各サンプルのポリフェノール含量を測定した。
一定量のサンプル(下記参照)を精秤し、終濃度80%になるように100%エタノールを添加し、激しく撹拌し、懸濁液を得た。この懸濁液を5分間煮沸後、50,00xg、10分間遠心分離して、沈澱物と上清に分離させた。沈殿物にさらに80%エタノールを添加して、撹拌、5分間の煮沸、50,00xg、10分間遠心分離して上清を回収し、第1回目の上清と合わせて、容量を一定量に合わせた。適切な吸光度が得られるように上清を希釈し、25μLの試料液に、125μLフェノール試薬(フェノール試薬原液を蒸留水で10倍希釈)を添加し、3分間撹拌した。撹拌後、125μL10%炭酸ナトリウム溶液を加え、15分間撹拌後、吸光度600nmの波長を測定した。クロロゲン酸を標準品としてポリフェノール含量をmg/100g試料で示した。
サンプルには、イモ類としてアンノウ、コガネセンガン、エイムラサキを、比較サンプルとしてメープルシロップと蜂蜜を準備した。イモ類については、前記製造例1の手順に従い得られた各イモ蜜(イモ蜜A-1、イモ蜜B-1、イモ蜜C-1)をサンプルとした。また該イモ蜜を実施例1の手順(予備乾燥:-80℃)に従いイモ蜜粉とし、該イモ蜜粉0.7gに対して水0.3mLを添加してイモ蜜粉水溶液とし、これも測定に供した。
図5に、イモ蜜(アンノウ、コガネセンガン、エイムラサキ)、メープルシロップ及び蜂蜜のポリフェノール含量の測定結果を示す。
図5に示すように、イモ蜜(アンノウ、コガネセンガン、エイムラサキ)はメープルシロップや蜂蜜と比べ、高ポリフェノール含量であった。また、イモ蜜から製造したイモ蜜粉(イモ蜜粉水溶液)においても、ほぼ同程度のポリフェノール含量を有していた。

<参考試験例3>DPPHラジカル消去能の測定
75μLのサンプル溶液に50%エタノール含有0.1M MES緩衝液を加え、撹拌後75μL DPPH溶液(3.94mgのDPPHを100%エタノール12.5mLに溶解し、12.5mLの蒸留水に混合して作製)を添加して、3分間撹拌した。撹拌後、520nmの吸光度を測定した。ラジカル消去能について、トロロックスを標準品として同様の操作で測定し、換算した。
サンプルには、イモ類としてアンノウ、コガネセンガン、エイムラサキを、比較サンプルとしてメープルシロップと蜂蜜を準備した。イモ類については、前記製造例1の手順に従い得られた各イモ蜜(イモ蜜A-1、イモ蜜B-1、イモ蜜C-1)をサンプルとした。また該イモ蜜を実施例1の手順(予備乾燥:-80℃)に従いイモ蜜粉とし、該イモ蜜粉0.7gに対して水0.3mLを添加してイモ蜜粉水溶液とし、これも測定に供した。

図6に示すように、イモ蜜(アンノウ、コガネセンガン、エイムラサキ)はメープルシロップや蜂蜜と比べ、高DPPHラジカル消去能を示した。また、イモ蜜から製造したイモ蜜粉(イモ蜜粉水溶液)においても、ほぼ同程度のDPPHラジカル消去能を有していた。
75μLのサンプル溶液に50%エタノール含有0.1M MES緩衝液を加え、撹拌後75μL DPPH溶液(3.94mgのDPPHを100%エタノール12.5mLに溶解し、12.5mLの蒸留水に混合して作製)を添加して、3分間撹拌した。撹拌後、520nmの吸光度を測定した。ラジカル消去能について、トロロックスを標準品として同様の操作で測定し、換算した。

Claims (21)
- サツマイモ由来のイモ蜜、その上清、又はこれら双方の粉末又は顆粒からなるイモ蜜粉。
- 平均粒子径が10μm~500μmである、請求項1に記載のイモ蜜粉。
- 水分含有量が0.1~1.0%(w/w)の範囲に乾燥されてなる、請求項1に記載のイモ蜜粉。
- 食物繊維を5~15質量%、
カリウムを0.5~1.5質量%含む、
請求項1に記載のイモ蜜粉。 - 前記粉末又は顆粒が、更に麦芽を含む、請求項1に記載のイモ蜜粉。
- 前記粉末又は顆粒が、更にビタミン及びミネラルその他の添加剤を含む、請求項1に記載のイモ蜜粉。
- 請求項1乃至6のいずれか一項に記載のイモ蜜粉からなる甘味料。
- 請求項1乃至6のいずれか一項に記載のイモ蜜粉を含有する加工食品。
- 前記加工食品が飲料である、請求項8に記載の加工食品。
- 前記加工食品が調味料である、請求項8に記載の加工食品。
- 前記加工食品がパン類である、請求項8に記載の加工食品。
- 前記加工食品が菓子類である、請求項8に記載の加工食品。
- 前記加工食品がめん類である、請求項8に記載の加工食品。
- 請求項1乃至6のいずれか一項に記載のイモ蜜粉を含有する健康食品。
- 請求項1乃至6のいずれか一項に記載のイモ蜜粉を含有する口腔ケア剤。
- 前記口腔ケア剤が歯磨剤である、請求項15に記載の口腔ケア剤。
- 前記口腔ケア剤が洗口液である、請求項15に記載の口腔ケア剤。
- 前記口腔ケア剤が抗う蝕剤又は抗歯周病剤である、請求項15に記載の口腔ケア剤。
- サツマイモ由来のイモ蜜及び/又はその上清から、乾燥微粒子化により、粉末又は顆粒に仕上げる過程を含む、イモ蜜粉の製造方法。
- 前記乾燥微粒子化が、凍結乾燥、真空乾燥、除湿乾燥、噴霧乾燥、ドラム乾燥又はそれらの組合せによる方法により実施される、
請求項19に記載のイモ蜜粉の製造方法。 - 前記イモ蜜及びその上清が、更に麦芽を含む、請求項19又は20に記載のイモ蜜粉の製造方法。
