Description
本実施例では、リコピン結晶25g、モノステアリン酸ショ糖エステル100g、リン脂質50g、ビタミンE 5g、グリセリン620g、水200gを原料とするリコピン着色剤が提供される。
(1)各原料を混合してから乳化缶に仕込んで、45℃までに加熱し、6000rpm/minの条件下で30minせん断乳化を行い、乳化懸濁液を得た;
(2)前記乳化懸濁液を粉砕機に仕込んで粉砕し、粉砕温度を40℃となるように制御し、粉砕の線速度を12m/sとし、120min粉砕した。
本実施例では、リコピン結晶300g、ツイーン80 1.1kg、リン脂質100g、茶ポリフェノール500g、グリセリン7kg、水1kgを原料とするリコピン着色剤が提供される。
(1)各原料を混合してから乳化缶に仕込んで、75℃までに加熱し、8000rpm/minの条件下で15minせん断乳化を行い、乳化懸濁液を得た;
(2)前記乳化懸濁液を粉砕機に仕込んで粉砕し、粉砕温度を50℃となるように制御し、粉砕の線速度を8m/sとし、150min粉砕した。
本実施例では、リコピン結晶1kg、モノパルミチン酸ショ糖エステル15kg、リン脂質2.5kg、アスコルビン酸3kg、グリセリン63.5kg、水15kgを原料とするリコピン着色剤が提供される。
(1)各原料を混合してから乳化缶に仕込んで、60℃までに加熱し、7000rpm/minの条件下で45minせん断乳化を行い、乳化懸濁液を得た;
(2)前記乳化懸濁液を粉砕機に仕込んで粉砕し、粉砕温度を60℃となるように制御し、粉砕の線速度を15m/sとし、120min粉砕した。
中国特許文献CN1053949Aの実施例1に開示された配合に従って、リコピン着色剤を製造した。具体的な配合において、含量が10%であるリコピン含油樹脂1kg、大豆リン脂質100g、グリセリン4.9kg、水3kgである。
具体的な製造方法は実施例1と同じである。
実施例1で提供した原料(抗酸化剤を除く)を用いて、中国特許文献CN1053949Aの実施例1に開示された方法により、リコピン着色剤を製造した。
(1)乳化剤(モノステアリン酸ショ糖エステル及びリン脂質)を水に入れて、40℃で攪拌して溶解させた後、リコピン結晶を入れ、1300rpm/minで高せん断混合乳化剤において、均一になるように30分攪拌して混合させた。
(2)グリセリンを50℃までに加熱し、20分攪拌してから、ステップ(1)の混合料を加入し、20MPaで材料を3回均質にした。
(3)均質になった材料を脱気タンクに移行し、−10kPa、45℃で6時間脱気・養生を行い、リコピン着色剤を得た。
本実施例では、実施例1で提供したリコピン着色剤により加工されたカニ蒲が提供される。具体な加工方法は下記の通りである。リコピン着色剤を5g取り、純水で10倍になるまで希釈した(即ち、50gになるまで希釈した)後、1kgのカニ蒲の表面に均一にスプレーした。
本発明で提供されるリコピン着色剤により加工されたカニ蒲について、鮮度維持実験及び水分保持実験を行った。
実験群:実施例4で提供した実施例1のリコピン着色剤により加工されたカニ蒲;
対照群:純水を50g取り、1kgのカニ蒲の表面に均一にスプレーして得られたもの。
実験群及び対照群で提供したカニ蒲を安定性試験箱(温度25℃、相対湿度60%)に置き、鮮度維持実験及び水分保持実験を行い、異なる期間放置したカニ蒲の微生物及び水分を検測した。その結果を表1に示す。
(1)乳化剤(モノステアリン酸ショ糖エステル及びリン脂質)を水に入れて、40℃で攪拌して溶解させた後、リコピン結晶を入れ、1300rpm/minで高せん断混合乳化機において、均一になるように30分攪拌して混合させた。
(2)グリセリンを50℃までに加熱し、20分攪拌してから、ステップ(1)の混合料を加入し、20MPaで材料を3回均質にした。
(3)均質になった材料を脱気タンクに移行し、−10kPa、45℃で6時間脱気・養生を行い、リコピン着色剤を得た。
Claims (10)
- 重量部で、リコピン結晶1〜3部、乳化剤5〜20部、抗酸化剤0.5〜5部、グリセリン60〜70部、水10〜20部を含む原料から製造されることを特徴とする、鮮度維持機能を有するリコピン食品着色剤。
- 前記乳化剤は、油溶性乳化剤と水溶性乳化剤とを混合してなるものであり、好ましくは油溶性乳化剤と水溶性乳化剤とを1〜5:5〜15の質量比で混合してなるものであることを特徴とする、請求項1に記載の食品着色剤。
- 前記水溶性乳化剤はツイーン、モノステアリン酸ショ糖エステル、モノパルミチン酸ショ糖エステルから選ばれる一種または多種であり、及び/又は、前記油溶性乳化剤としてリン脂質を用いることを特徴とする、請求項2に記載の食品着色剤。
- 前記抗酸化剤は、L−アスコルビン酸、茶ポリフェノール、ビタミンEから選ばれる一種または多種であることを特徴とする、請求項1に記載の食品着色剤。
- 前記原料は質量百分率で、リコピン結晶1〜3%、油溶性乳化剤1〜5%、水溶性乳化剤5〜15%、抗酸化剤0.5〜5%、グリセリン60〜70%、残量の水からなるものであることを特徴とする、請求項1〜4のいずれか一項に記載の食品着色剤。
- 前記食品着色剤のD50は0.55〜0.65μmであり、及び/又は
前記食品着色剤の色調値はL*25〜35、a*30〜35、b*20〜25であり、及び/又は、
前記食品着色剤の温度25℃、相対湿度60%条件下の粘度は20000〜40000mPa・sであることを特徴とする、請求項1〜5のいずれか一項に記載の食品着色剤。 - 請求項1〜6のいずれか一項に記載の食品着色剤の製造方法であって、原料を混合してから乳化させ、さらに粉砕することを特徴とする、食品着色剤の製造方法。
- 前記乳化は45〜75℃で行い、好ましくは6000〜8000rpm/minの条件下で15〜45minせん断乳化を行うことを特徴とする、請求項7に記載の製造方法。
- 前記粉砕は40〜60℃の条件下で行い、好ましくは線速度8〜15m/sで120〜150min粉砕することを特徴とする、請求項7または8に記載の製造方法。
- 請求項1〜6のいずれか一項に記載のリコピン着色剤または請求項7〜9のいずれか一項に記載の製造方法で製造されるリコピン着色剤の魚肉練り類食品の製造における使用であって、好ましくは前記リコピン着色剤を希釈してから魚肉練り類食品の表面にスプレーする、リコピン着色剤の魚肉練り類食品の製造における使用。
