Claims (5)
- 丸大豆原料を水に浸漬し脱水したのち、温度15〜25℃の範囲で稚発芽大豆とし、該稚発芽大豆を蒸気加熱後テンペ菌で発酵させてなる発芽大豆のテンペ発酵食材の製造方法。
- 稚発芽大豆の発芽長は0.5〜10mmの範囲である請求項1記載の発芽大豆のテンペ発酵食材の製造方法。
- 稚発芽大豆を蒸気蒸し・放熱後に破砕大豆とし、該破砕大豆にテンペ菌とともにデキストリンを添加してテンペ菌で発酵させてなる請求項1又は2記載の発芽大豆のテンペ発酵食材の製造方法。
- デキストリンは水溶性食物繊維を含む難消化性デキストリンである請求項3記載の発芽大豆のテンペ発酵食材の製造方法。
- 請求項1ないし4のいずれか記載の製造方法により得られたテンペ発酵食材。
