Claims (1)
- 丸大豆原料を水に浸漬し脱水したのち、温度15〜25℃の範囲で発芽長が0.5〜10mmの範囲の稚発芽大豆とし、
該稚発芽大豆を蒸気蒸し・放熱後に粉末化がしない粗破砕によって丸大豆1粒の破砕程度が2〜8粒となるように分割して蒸し・破砕大豆とし、
該蒸し・破砕大豆にテンペ菌を添加・混合してテンペ菌で発酵させて発酵物とし、
該発酵物を蒸し殺菌した後に乾燥してデキストリンを添加、粉砕・混合することを特徴とする発芽大豆のテンペ発酵食材の製造方法。
