Abstract
Description
液体または半液体のベース製品の熱処理用の第1の容器2と、
液体または半液体のベース製品を供給するための、第1の熱処理容器2に接続された、液体または半液体のベース製品を供給するための第2の容器3と、
第1の処理容器2内の製品を混合するための、第1の熱処理容器2内に取り付けられた撹拌機4と、
第1の熱処理容器2に熱を放出するために第1の処理容器2の壁に関連付けられた熱交換器6を備える熱システム5と、を備える。
液体または半液体のベース製品の熱処理のための第3の容器20と、
第3の熱処理容器20内の液体または半液体のベース製品の熱処理のための第3の処理容器20の壁に関連付けられた第2の交換器22と、
第3の熱処理容器20の内側に取り付けられた、第3の処理容器20内の製品を混合するための第2の撹拌機21であって、外面的に螺旋形状であり且つ第1の入口端と第2の出口端との間に延び、これにより、当該第2の撹拌機21が回転すると、液体または半液体製品が第1の入口端35と第2の出口端36との間を前進させられる、第2の撹拌機21と、を備える。
液体または半液体のベース製品を第2の供給容器3から第1の熱処理容器2に連続的に供給するステップと、
第1の処理容器2の壁を50°と85℃の間の温度に加熱し且つ同時に液体または半液体製品を撹拌機4の入口端35から出口端36まで実質的に連続的に前進させるように撹拌機4を回転させるステップを介して液体または半液体のベース製品を低温殺菌するステップと、を含む。
Claims (14)
- 液体または半液体食品を低温殺菌するための機械(1)であって、
液体または半液体のベース製品の熱処理用の第1の実質的に円筒形の容器(2)と、
前記液体または半液体のベース製品を供給するための、前記第1の熱処理容器(2)に接続された、前記液体または半液体のベース製品を供給するための第2の容器(3)と、
前記第1の処理容器(2)で前記製品を混合するための、前記第1の熱処理容器(2)内に取り付けられた撹拌機(4)と、
前記第1の処理容器(2)の壁に関連付けられ且つ前記第1の熱処理容器(2)に熱を放出するように構成された交換器(6)を含む熱システム(5)と、を備え、
前記撹拌機(4)は、外面的に螺旋形状であり且つ第1の入口端と第2の出口端との間に延びており、これにより、前記撹拌機(4)が回転すると、前記液体または半液体製品が前記第1の入口端(35)と前記第2の出口端(36)との間を前進させられる、機械(1)。 - 前記第2の供給容器(3)は、オープントップタブである、請求項1に記載の機械(1)。
- 前記熱システムに接続され且つ前記第1の処理容器(2)の前記壁を50°と85℃の間の温度に加熱するために前記熱システムを制御するように構成された駆動および制御ユニット(7)を備える、請求項1または2に記載の機械(1)。
- 前記熱システムに接続され且つ前記第1の処理容器(2)の前記壁を60°と85℃の間の温度に加熱するために前記熱システムを制御するように構成された駆動および制御ユニット(7)を備える、請求項1から3のいずれか1項に記載の機械(1)。
- 前記熱システム(5)に接続され且つ前記第1の処理容器(2)の前記壁を60°と75℃の間の温度に加熱するために前記熱システムを制御するように構成された駆動および制御ユニット(7)を備える、請求項1から4のいずれか1項に記載の機械(1)。
- 前記撹拌機(4)は、外面的に螺旋形状の第1の部分(4A)と、少なくとも1つの放射状ブレード(43)を有する第2の部分(4B)とを備え、前記第2の部分(4B)は前記第1の入口端に配置され、前記第1の部分(4A)は前記第2の出口端に配置されている、請求項1から5のいずれか1項に記載の機械(1)。
- 液体または半液体のベース製品の熱処理用の第3の容器(20)と
前記第3の熱処理容器(20)内の前記液体または半液体のベース製品の熱処理のための前記第3の処理容器(20)の壁に関連付けられた第2の交換器(22)と、
前記第3の熱処理容器(20)内に取り付けられた、前記第3の処理容器(20)の前記製品を混合するための第2の撹拌機(21)であって、外面的に螺旋形状であり且つ第1の入口端と第2の出口端の間を延びており、これにより、当該第2の撹拌機(21)が回転すると、前記液体または半液体製品は、前記第1の入口端と前記第2の出口端との間を前進させられる、第2の撹拌機(21)と、を備える請求項1から6のいずれか1項に記載の機械(1)。 - 前記第3の処理容器(20)の壁に関連付けられた前記第2の交換器(22)は、前記第3の処理容器(20)内の前記ベース製品を冷却するように構成される、請求項7に記載の機械(1)。
- 前記第1の容器(2)は、前記第1の容器(2)から出てくる前記熱処理された製品が前記第3の容器(20)に直接運ばれるように、前記第3の容器(20)に接続される、請求項8に記載の機械(1)。
- 前記第2の供給容器(3)は、前記第1の熱処理容器(2)および前記第3の熱処理容器(20)に接続可能である、請求項7から9に記載の機械(1)。
- 前記熱システムは、熱が前記交換器(6)を介して前記第1の処理容器(2)に伝達される第1の加熱構成と、前記第1の容器(2)が前記交換器(6)を介して冷却される第2の冷却構成との間で切り替え可能である、請求項1から10のいずれか1項に記載の機械(1)。
- 請求項1から11のいずれか1項に記載の機械で液体または半液体食品を低温殺菌するための方法であって、
前記液体または半液体のベース製品を、前記第2の供給容器(3)から前記第1の熱処理容器(2)に連続的に供給するステップと、
前記第1の処理容器(2)の壁を50°と85℃の間の温度に加熱し且つ同時に前記液体または半液体製品を前記撹拌機(4)の前記入口端(35)から前記出口端(36)に実質的に連続的に前進させるように前記撹拌機(4)を回転させるステップを介して前記液体または半液体のベース製品を低温殺菌するステップと、を含む方法。 - 前記第1の処理容器(2)の前記壁を50°と85℃の間の温度に加熱する前記ステップが、前記第1の処理容器(2)の前記壁を60°と85℃の間の温度に加熱するステップを含む、請求項12に記載の方法。
- 前記第1の処理容器(2)の前記壁を50°と85℃の間の温度に加熱する前記ステップが、前記第1の処理容器(2)の前記壁を60°と75℃の間の温度に加熱するステップを含む、請求項13に記載の方法。
