Claims (5)

  1. 乾燥コーヒー粉末を製造するためのプロセスであって、
    (i)0〜110℃の温度の水を使用して、焙煎及び粉砕コーヒー豆からコーヒー固形分を抽出して、第1コーヒー抽出物を得るステップと、
    (ii)0.1〜100kDaの分子量カットオフを有する選択的透過膜を使用して、前記第1コーヒー抽出物を濾過して、低分子量成分濃度を低減するステップであって、前記透過膜を透過する低分子量コーヒー固形分が透過液を形成し、前記透過膜に保持される高分子量コーヒー固形分が保持分画を形成するステップと、
    (iii)前記保持分画を乾燥させて、乾燥コーヒー粉末を形成するステップと、を含み、
    前記乾燥コーヒー粉末が、1kDaより大きい分子量を有する成分対1kDaより少ない分子量を有する成分の濃度の比が少なくとも5であるように構成される、プロセス。
  2. 前記選択的透過膜が、1kDaの分子量カットオフを有する、請求項1に記載のプロセス。
  3. 前記保持分画が乾燥前に濃縮される、請求項1又は2に記載のプロセス。
  4. 請求項1〜3のいずれか一項に記載のプロセスにより得られる乾燥コーヒー粉末。
  5. 窒素を注入したコーヒー飲料を製造するための請求項4に記載の乾燥コーヒー粉末の使用。
