Abstract
Description
1.セルロースを有効成分とし、かつ、キサンタンガムの含有量が5%(w/w)以下である、加熱により不溶化した乳清蛋白質の飲料中の分散を安定化させる安定化剤。
2.前記セルロースが結晶セルロースである、前記1に記載の安定化剤。
3.さらにカルボキシメチルセルロースを含む、前記2に記載の安定化剤。
4.加熱により不溶化した乳清蛋白質と、前記1〜3のいずれか1に記載の安定化剤とを含有する、液体飲料。
5.25℃における粘度が、5〜50mPa・sである、前記4に記載の液体飲料。
6.さらにカゼインを含む、前記4または5に記載の液体飲料。
7.前記乳清蛋白質と前記カゼインとの質量比が、前者:後者として、2:8〜5:5である、前記6に記載の液体飲料。
8.乳清蛋白質および前記1〜3のいずれか1に記載の安定化剤を含有する水性液体を加熱殺菌する工程を含む、液体飲料の製造方法。
まず、本発明の安定化剤について説明する。本発明の安定化剤は、セルロースを有効成分とし、かつ、キサンタンガムの含有量が5%(w/w)以下であることを特徴とする。本発明の安定化剤は、加熱により不溶化した乳清蛋白質の飲料中の分散を安定化させることができる。
次に、本発明の飲料について説明する。本発明の飲料は、加熱により不溶化した乳清蛋白質と、前記本発明の安定化剤とを含有する。本発明の飲料は、加熱により不溶化した乳清蛋白質と、前記本発明の安定化剤とを含有するため、乳清蛋白質の沈殿が抑制され、かつ乳清蛋白質の割合が従来と比較して高められた飲料となり得る。
次に、本発明の飲料の製造方法について説明する。本発明の飲料の製造方法は、乳清蛋白質および前記本発明の安定化剤を含有する水性液体を加熱する工程を含む。
(安定化剤1の調製)
以下の配合割合を有する安定化剤1を用意した。
結晶セルロース:58.4%(w/w)
キサンタンガム:2.24%(w/w)
カルボキシメチルセルロース:4.0%(w/w)
グリセリン脂肪酸エステル:12.4%(w/w)
カゼインNa:0.8%(w/w)
リン酸二ナトリウム:0.1%(w/w)
食品素材(デキストリン):22.06%(w/w)
なお、安定化剤1は、太陽化学株式会社から市販されている商品名サンソフトスーパーV−228としても入手可能である。
乳清蛋白質(三栄源エフ・エフ・アイ株式会社製シンプレス100)を3.1g、総合乳蛋白質(日本新薬株式会社製ミルカMCI80)を7.7g、前記安定化剤1を飲料全体に対し0.5%(w/w)となるように、水125mlに溶解ないし分散させ、アルミ製の容器に充填し、128℃で2分間の加熱殺菌を行い、飲料1を得た。なお、飲料1において乳清蛋白質とカゼインとの質量比は、前者:後者として、4:6である。また、飲料1の25℃での粘度は、26mPa・sであった。
実施例1において、以下の配合割合を有する安定化剤2を使用し、安定化剤2を飲料全体に対し0.4%(w/w)となるように配合したこと以外は、実施例1を繰り返し、飲料2を製造した。飲料2の25℃での粘度は、46mPa・sであった。結果を表1に示す。

なお、安定化剤2は、三栄源エフ・エフ・アイ株式会社から市販されている商品名ホモゲンNO.7521Pとしても入手可能である。
実施例1において、安定化剤3として、k−カラギーナン(三晶株式会社製K−100−J)を使用し、安定化剤3を飲料全体に対し0.04%(w/w)となるように配合したこと以外は、実施例1を繰り返し、飲料3を製造した。飲料3の25℃での粘度は、22mPa・sであった。結果を表1に示す。
実施例1において、以下の配合割合を有する安定化剤4を使用し、安定化剤4を飲料全体に対し0.3%(w/w)となるように配合したこと以外は、実施例1を繰り返し、飲料4を製造した。飲料4の25℃での粘度は、26mPa・sであった。結果を表1に示す。

なお、安定化剤4は、三栄源エフ・エフ・アイ株式会社から市販されている商品名サンアーティストPNとしても入手可能である。
実施例1において、安定化剤5として、カラギーナン、キサンタンガム、ペクチンを含む、ユニテックフーズ株式会社製Unet XD−21を飲料全体に対し0.1%(w/w)となるように配合したこと以外は、実施例1を繰り返し、飲料5を製造した。飲料5は23℃でゲル状であった。結果を表1に示す。
実施例1において、安定化剤1を使用しなかったこと以外は、実施例1を繰り返し、飲料6を製造した。飲料6の25℃での粘度は、10mPa・sであった。結果を表1に示す。
実施例1において、以下の配合割合を有する安定化剤6を使用し、安定化剤6を飲料全体に対し0.4%(w/w)となるように配合したこと以外は、実施例1を繰り返し、飲料6を製造した。飲料6の23℃での粘度は、48mPa・sであった。結果を表1に示す。

乳清蛋白質を含有する以下の表2の組成からなる飲料を製造した。
栄養剤中の乳清蛋白質の割合を高めることが、筋肉量や筋力量を効率よく増やすためには有効であることを示すために、表3に示す蛋白質とアミノ酸のみで構成され、且つ、乳清蛋白質量の異なる3種類の蛋白質栄養剤を作成し、これらの栄養剤をラットに投与した際の筋蛋白質(脛骨筋)の合成速度を比較した。

- セルロースを有効成分とし、かつ、キサンタンガムの含有量が5%(w/w)以下である、加熱により不溶化した乳清蛋白質の飲料中の分散を安定化させる安定化剤。
- 前記セルロースが結晶セルロースである、請求項1に記載の安定化剤。
- さらにカルボキシメチルセルロースを含む、請求項2に記載の安定化剤。

- 25℃における粘度が、5〜50mPa・sである、請求項4に記載の飲料。
- さらにカゼインを含む、請求項4または5に記載の飲料。
- 前記乳清蛋白質と前記カゼインとの質量比が、前者:後者として、2:8〜5:5である、請求項6に記載の飲料。
- 乳清蛋白質および請求項1〜3のいずれか1項に記載の安定化剤を含有する水性液体を加熱する工程を含む、飲料の製造方法。
