Description
本発明は乳ベース製剤(milk−based formulation)に関する。より具体的に、本発明は炭水化物含量が低減された還元乳(recombined milk)の調製に好適な乳ベース製剤に関する。
粉乳および水を還元する(recombining)ことにより調製される還元乳飲料は通常の乳に比べていくつかの欠点を有することが知られている。欠点は、特に乳糖含量を低減した還元乳飲料の調製の際に現れる。欠点は、事実上官能的および栄養的の両方である。例えば、還元乳飲料は加熱処理の間、および特に飲料の保存の間に沈殿/沈渣を形成しやすい。沈殿物は、主に乳タンパク質で構成される。乳タンパク質のうち、乳清タンパク質が非常に熱感受性であることが知られている。いくつかのミネラルもまた、還元乳飲料の沈殿事象に影響を与え得る。現在、還元乳製品の沈殿の感受性、凝集に関連する問題は、製品に安定剤のような添加物を用いることで回避されている。

工程を含む、低減された炭水化物含量の、本発明の乳ベース製剤の製造方法を提供する。。
脱脂乳をGR61PP膜(Dow、米国)で10℃の温度、濃縮係数4で限外ろ過し、限外濾過(UF)透過液および限外濾過(UF)保持液を得た。UF透過液をさらにDesal DK膜(Osmonics、米国)で10℃〜15℃の温度、濃縮係数4でナノろ過し、ナノろ過(NF)透過液およびナノろ過(NF)保持液を得た。NF透過液をFilmtec RO−390−FF膜(Dow、米国)での濃縮係数10の逆浸透(RO)により濃縮し、RO透過液およびRO保持液を提供した。
脱脂乳を濃縮係数が1.6であることを除いて実施例1に記載のとおりに限外ろ過し、UF保持液を得た。
脱脂乳を蒸発させ乾物含量30%の乳濃縮物を得た。乳濃縮物を、陽イオン交換樹脂を充填したクロマトグラフィーカラムにポンプ輸送した。陽イオン交換樹脂を通して溶出した脱脂乳を、乳ミネラルおよびタンパク質の大部分が同じ画分になるように回収した。画分の回収が終了するとき、乳糖の大部分はクロマトグラフィーカラムにまだ残っていた。クロマトグラフィーによる分離は約60℃の温度で実施した。
さまざまな乳飲料を実施例1〜3で得られた画分および粉末から調製した。具体的な配合は表7に示す。数値は配合中の各々の画分の百分率を示す。

Claims (34)
- 炭水化物のタンパク質に対する比が最大で1.1であり、乾量基準で少なくとも5.4%のタンパク質含量を有し、灰分のタンパク質に対する比が開始原料として使用される乳原料のものと実質的に同一である、炭水化物含量が低減された乳ベース製剤。
- 炭水化物のタンパク質に対する比が最大で0.9である、請求項1に記載の乳ベース製剤。
- 炭水化物のタンパク質に対する比が最大で0.4である、請求項2に記載の乳ベース製剤。
- 炭水化物のタンパク質に対する比が最大で0.02である、前記請求項のいずれかに記載の乳ベース製剤。
- タンパク質含量が乾量基準で5.4〜80%である、前記請求項のいずれかに記載の乳ベース製剤。
- 一価ミネラルのタンパク質に対する比が、乳原料のものと実質的に同一である、前記請求項のいずれかに記載の乳ベース製剤。
- 粉末である、前記請求項のいずれかに記載の乳ベース製剤。
- 乳原料の限外ろ過からの乳タンパク質濃縮物を含む、前記請求項のいずれかに記載の乳ベース製剤。
- 乳原料の限外ろ過透過液のナノろ過からのナノろ過透過液から得られた乳ミネラルの逆浸透濃縮物を含む、請求項8に記載の乳ベース製剤。
- 乳原料のクロマトグラフィーによる分離からのタンパク質およびミネラルを含む画分を含む、請求項1〜7のいずれかに記載の乳ベース製剤。
- 無脂全固形分換算で5.4〜65%のタンパク質、4.6〜41%の炭水化物、および1.0〜14%の灰分を含む、前記請求項のいずれかに記載の乳ベース製剤。
- 約48〜60%のタンパク質、約24〜43%の炭水化物および10〜13%の灰分を含む、請求項11に記載の乳ベース製剤。
- 乳原料から炭水化物を除去して、炭水化物含量が低減された乳ベース製剤を得ることを含む、請求項1〜12のいずれか一項に記載の炭水化物含量が低減された乳ベース製剤の製造方法。
- 乳ベース製剤が粉末に濃縮される、請求項13に記載の方法。
- 除去が、酵素、クロマトグラフィー、沈殿またはそれらの組み合わせによる手段で実施される、請求項13または14に記載の方法。
- a)乳原料の成分をタンパク質画分、炭水化物画分およびミネラル画分に分離する、
b)タンパク質画分の少なくとも一部分およびミネラル画分の少なくとも一部分を組み合わせて、乳ベース製剤を得る、
工程を含む、請求項1〜12のいずれかに記載の炭水化物含量が低減された乳ベース製剤の、製造方法。 - 分離が限外ろ過、ナノろ過および逆浸透により達成される、請求項16に記載の方法。
- 乳原料が限外ろ過(UF)に供されてUF透過液およびタンパク質画分としてのUF保持液を得る、請求項17に記載の方法。
- 限外ろ過透過液がナノろ過に供されてNF透過液およびNF保持液としての炭水化物画分を得て、NF透過液が逆浸透(RO)に供されてRO保持液としてのミネラル画分を得る、請求項18に記載の方法。
- タンパク質画分およびミネラル画分の一つまたは両方が少なくとも17%の乾物含量に濃縮される、請求項16〜19のいずれかに記載の方法。
- 乳ベース製剤が粉末に濃縮される、請求項16〜20のいずれかに記載の方法。
- 最大で1.1の炭水化物のタンパク質に対する比および乾量基準で少なくとも5.4%のタンパク質含量を有する粉乳の、低減された炭水化物含量をもつ還元乳製品の調製への使用。
- 粉乳のタンパク質含量が乾量基準で少なくとも37%である、請求項22に記載の使用。
- タンパク質含量が乾量基準で少なくとも45%である、請求項23に記載の使用。
- 粉乳が、請求項1〜12のいずれかの乳ベース製剤であるかまたは請求項13〜21のいずれかにより調製される、請求項22〜24のいずれかに記載の使用。
- 還元乳製品が乳飲料である、請求項22〜25のいずれかに記載の使用。
- 還元乳製品中の粉乳の量が0.5〜15重量%、好ましくは2〜7重量%である、請求項22〜26のいずれかに記載の使用。
- 最大で1.1の炭水化物のタンパク質に対する比および乾量基準で少なくとも5.4%のタンパク質含量を有する粉乳を液体および任意に他の原料で還元し、低減された炭水化物含量をもつ還元乳を提供することを含む、低減された炭水化物含量をもつ還元乳製品を製造する方法。
- 還元乳が飲料である、請求項28に記載の方法。
- 還元乳製品の炭水化物含量最大で3.1重量%である、請求項28または29に記載の方法。
- 還元乳製品が熱処理に供される、請求項28〜30のいずれかに記載の方法。
- 還元乳製品のいかなる残余の乳糖が加水分解される、請求項28〜31のいずれかに記載の方法。
- 還元乳製品のいかなる残余の乳糖が熱処理後に加水分解される、請求項32に記載の方法。
- 還元乳製品の官能特性が脱脂乳のものと同等である、請求項28〜33のいずれかに記載の方法。
