Description
37.5グラムのCitrem 3212(商標名)及びPGPR(商標名)をそれぞれ1175グラムのひまわりオイルに溶解した。

Claims (16)
- 共押出成形によって食品を調製する方法であって、ケーシング組成物及びバリア組成物を可食フィラー上の層として共押出し、これにより、前記可食フィラーにケーシング層及びバリア層を設け、また前記バリア層は前記可食フィラーと前記ケーシング層との間に存在させる、方法。
- 請求項1記載の方法において、前記ケーシング組成物は、コラーゲン、多糖類及び水を含有し、また好適には、前記多糖類はアルギン酸塩を含有する、方法。
- 請求項1又は2記載の方法において、前記ケーシング組成物は、窒素(N)のパーセンテージを測定し、その測定値に5.52を積算することによって表現されるコラーゲンを2〜7重量%、好適には3〜6重量%の量で含有し、前記ケーシング組成物は、多糖類を1〜5重量%、好適には2.5〜4重量%の量で含有し、また好適には、前記多糖類はアルギン酸塩を含有する、方法。
- 請求項1〜3のうちいずれか一項記載の方法において、前記ケーシング組成物はコラーゲン及びアルギン酸塩を含有し、コラーゲン対アルギン酸塩の重量比は1.2未満、好適には1.1未満とする、方法。
- 請求項1〜4のうちいずれか一項記載の方法において、前記ケーシング組成物は、さらに、燻煙液誘導体を0〜10重量%、好適には少なくとも1重量%、より好適には3重量%よりも多く含有する、方法。
- 請求項1〜5のうちいずれか一項記載の方法において、前記バリア組成物は、増粘剤、金属塩、水及び食用オイル及び/又は脂肪のうち1つ又はそれ以上を含有する、方法。
- 請求項1〜6のうちいずれか一項記載の方法において、前記共押出成形は、3層押出機によって行う、方法。
- 請求項1〜7のうちいずれか一項記載の方法において、前記共押出しに続いて、食品を金属塩の溶液に接触させ、また好適には、前記金属塩はカルシウム塩を含有する、方法。
- 可食フィラー、ケーシング層、及びバリア層を有する食品、とくにソーセージであって、前記可食フィラーを前記バリア層によって少なくとも部分的にカバーし、また前記バリア層を前記ケーシング層によって少なくとも部分的にカバーする、食品。
- 請求項9記載の食品において、前記食品をソーセージとする、食品。
- 請求項9又は10記載の食品において、前記ケーシング層は、コラーゲン、多糖類及び水を含有するケーシング組成物を含み、また好適には、前記多糖類はアルギン酸塩を含有する、食品。
- 請求項9〜11記載の食品において、前記ケーシング層は、コラーゲンを2〜7重量%、好適には3〜6重量%の量で含有するケーシング組成物を含み、前記ケーシング組成物は、多糖類を1〜5重量%、好適には2〜4重量%の量で含有し、また好適には、前記多糖類はアルギン酸塩を含有する、食品。
- 請求項9〜12記載の食品において、前記ケーシング層は、架橋剤を0〜10重量%の量で含有するケーシング組成物を含み、前記架橋剤は、燻煙液抽出物及び/又は熱分解糖類を含有する、食品。
- 請求項9〜13記載の食品において、前記バリア層は、増粘剤、金属塩、水、食用オイル及び/又は脂肪を含有するバリア組成物を含む、食品。
- 請求項9〜14記載の食品において、前記食品は、好適には、3層押出機によって形成した共押出し生産物とする、食品。
- 請求項9〜15記載の食品において、前記ケーシング層は、好適には、前記ケーシング層を金属塩の溶液に接触させることによって前記ケーシング層に供給される金属塩を含有し、また好適には前記金属塩はカルシウム塩を含有する、食品。
