前記熱交換器が、第1のプレート、前記第1のプレートに対して取り付けられる第2のプレート、並びに前記第1のプレートと前記第2のプレートとの間に配置される第1のスペーサ及び第2のスペーサを備え、前記第1のプレート、前記第2のプレート、前記第1のスペーサ、及び前記第2のスペーサが、前記肉エマルジョンが前記熱交換器を通過するための少なくとも1つの被温度制御通路を形成する、方法。 - 前記第1のプレート及び前記第2のプレートの少なくとも一方の一部分の少なくとも1つの通路に流体を通過させることにより、前記熱交換器の温度を制御するステップを含む、請求項25に記載の方法。
- 前記第1のプレート及び前記第2のプレートが、複数の個別の被温度制御ゾーンを画定する、請求項25に記載の方法。
- 前記第1のプレート及び前記第2のプレートの各部分を貫通する複数の別個の通路に流体を通過させることにより各被温度制御ゾーンの温度を制御するステップを含む、請求項27に記載の方法。

タンパク質及び脂質を含む肉エマルジョンを形成するステップと、
前記肉エマルジョンを粉砕及び加熱するステップと、
熱交換器内に前記肉エマルジョンを導入し、少なくとも50psiの圧力に前記肉エマルジョンをさらすステップであり、前記熱交換器が、第1のプレート、前記第1のプレートに対して取り付けられる第2のプレート、並びに前記第1のプレートと前記第2のプレートとの間に配置される第1のスペーサ及び第2のスペーサを備え、前記第1のプレート、前記第2のプレート、前記第1のスペーサ、及び前記第2のスペーサが、前記肉エマルジョンが前記熱交換器を通過するための少なくとも1つの被温度制御通路を形成する、ステップと、
前記熱交換器から前記肉エマルジョンを導出するステップと
を含む、方法。 - 前記導出される肉エマルジョン製品を包装及び滅菌するステップを含む、請求項29に記載の方法。
- 前記導出される肉エマルジョンを乾燥させ、前記肉エマルジョンから粗挽き状片を形成するステップを含む、請求項29に記載の方法。
- 請求項25に記載の方法により製造される食品製品。
- 請求項29に記載の方法により製造される肉エマルジョン製品。
- 請求項30に記載の方法により製造される肉エマルジョン製品。
