Abstract
Description
前記押出機への導入時に、粉体状の生地素材、特に穀粉にノズル手段によって圧力下で調製液を吹き付けて前記生地素材を湿潤させてスターター生地を調製し、
前記押出機内において、O2含有ガスを混合しながら、混練部材によって前記スターター生地を混練し、
少なくとも1つのガス抜き部にて前記混練した生地から前記O2含有ガスを除去し、
成形ツールを介して前記生地を前記押出機から排出する方法を提供する。
Claims (14)
- 押出機によってベーカリー生地を製造するための方法であって、
前記押出機への導入時又は導入直前に、粉体状の生地素材、特に穀粉にノズル手段によって高圧下で調製液を吹き付けて前記生地素材を湿潤させ、前記生地素材のタンパク質を水和させてスターター生地を調製し、
前記押出機内において、O2含有ガスを混合しながら、混練部材によって前記スターター生地を混練して前記生地素材中の溶存酸素含有率を5〜300ppmとし、
少なくとも1つのガス抜き部にて前記混練した生地から前記O2含有ガスを除去し、
成形ツールを介して前記生地を前記押出機から排出する方法。 - 請求項1において、前記O2含有ガスを周囲圧力よりも高い第1の圧力で前記押出機に導入する方法。
- 請求項2において、前記押出機の混練部において前記ガスを混合するために、前記スターター生地を前記第1の圧力とは異なる、特に前記第1の圧力よりも低い第2の圧力で混練する方法。
- 請求項1乃至3のいずれか1項において、前記押出機内において、前記スターター生地を複数の混練部において繰り返し混練し、前記混練部間に少なくとも1つの高圧の圧力部を配置する方法。
- 請求項1乃至4のいずれか1項において、前記押出機は反対方向に駆動される2つの押出軸を有する方法。
- 請求項1乃至5のいずれか1項において、ハウジング及び/又は押出軸を温度調節、特に冷却する方法。
- 請求項1乃至6のいずれか1項において、前記調製液を10〜100バールの圧力で前記生地素材に吹き付け、前記生地素材のタンパク質の水和を生じさせる方法。
- 請求項1乃至7のいずれか1項において、前記押出機の出口の前の低圧部において周囲圧力よりも低い圧力に設定する方法。
- 請求項8において、前記低圧部と前記出口との間の最終混練部内で混練を行う方法。
- 請求項1乃至9のいずれか1項において、前記押出機から排出された直後に前記生地を分割する方法。
- 請求項1乃至10のいずれか1項において、前記生地を前記押出機から焼き型に直接押出すか、生地シートに成形し、ラミネート設備又は生地シート設備に供給する方法。
- ベーカリー生地を製造する装置、特に請求項1乃至11のいずれか1項に記載の方法を実施する装置であって、
各押出軸に沿ってガスを生地に混合する混練部材が少なくとも1つの混練部に配置された、反対方向に駆動される少なくとも2つの押出軸と、
ガスを除去し、前記生地中の前記ガスを所定の含有率とする少なくとも1つのガス抜き部と、
成形ツールを備え、前記生地を排出するための少なくとも1つの出口と、
を備えた押出機を有し、
前記押出機の入口領域にノズル手段が設けられ、前記押出機への導入前に前記ノズル手段によって高圧下で生地素材に調製液を吹き付けて、スターター生地を形成する装置。 - 請求項12において、混練部材を備えた複数の混練部が設けられ、少なくとも1つの高圧の圧力部が前記混練部間に設けられている装置。
- 請求項13において、前記圧力部へ圧力流体を導入する供給ラインが設けられ、前記押出機内において圧力を部分的に上昇させる装置。
