2.(a)前記アミノ酸モチーフ(a)が、配列番号9[HgGG]、配列番号10[HhGG]、配列番号11[HPGs]、配列番号12[HcGG]、配列番号13[HwGG]、および配列番号14[HaGG]からなる群から選択され;

13.前記細胞が、配列番号153、配列番号157、配列番号183、および配列番号213からなる群から選択される配列を有するタンパク質を発現する、上記9に記載の形質転換宿主細胞。
14.前記宿主細胞が、ω−6脂肪酸およびω−3脂肪酸からなる群から選択される多価不飽和脂肪酸を産生する、上記8または11に記載の形質転換宿主細胞。
15.前記植物宿主細胞が、油料種子植物細胞である、上記9に記載の形質転換宿主細胞。

  1. (a)配列番号34[HxGx]に記載のアミノ酸モチーフと、
    (b)配列番号1[HxxxH]に記載のアミノ酸モチーフと
    を含んでなり、配列番号34[HxGx]が配列番号7[HPGG]と同一でなく、配列番号1[HxxxH]が配列番号8[HDASH]と同一でない、Δ5デサチュラーゼ活性を有する変異ポリペプチド。
  2. 請求項1に記載のポリペプチドをコードする、単離された核酸分子。
  3. 請求項1に記載のポリペプチドを発現する、形質転換宿主細胞。
